    Reverse Searing on a charcoal grill is a great way to get that delicious charcoal-flavored steak that everyone loves. This technique is simple to learn and will give you steak that's cooked to perfection every time! So be sure to watch this video and learn how to Reverse Sear on a charcoal grill!
    Directions:
    1. bring your steak up to room temperature. Liberally salt the steak about 30 minutes to a couple of hours before cooking.
    2. put the charcoal on one side of the charcoal grill
    3. put your steak on the side of the grill that does not have burning charcoal underneath. close the lid
    4. periodically check the internal temperature of the steak. When it hits about 118 degrees F, (for med rare. see chart below) move the steak over the burning coals
    5. flip the steaks about every 30 seconds. Baste with butter. keep checking the internal temperature
    6. When the internal temperature reaches between 125 - 130 degrees F,
    remove from the grill.
    7. let rest 5 minutes and serve.
    Internal Temperature Chart for Steak
    Rare remove from heat @ 118 degrees for final temperature of 120
    Medium Rare remove from heat @ 125 for final temp of 130
    Medium remove from heat @ 136 degrees for final temperature of 140
    Medium Well remove from heat @ 143 degrees for final temp of 150
    Well Done remove from heat @ 154 degrees for final temp of 160

    Try long metal tongs to place the charcoal in the pile. Try the snake method on your grill for roasts and stuff. I’ve been experimenting with that. Works great for low and slow. Great video as usual Ralph! Lovin what your doing brother!

    I find that the instant read thermometers read high by quite a bit when you are using direct heat. I think pulling it off of the fire for a minute or so like you did before checking the temperature makes a big difference. I was initially checking the temperature while on the grill and I was getting 160s and 170s but still ended up with a medium rare. Might be the thermometer to but it seems pretty accurate otherwise.
