It’s the unique ear bones of the freshwater drum! As far as I know only that type of fish has these! It’s very interesting

They are basically Ballast Stones to keep them level, Hardhead Catfish have them as well!!!

If you catch enough of them, you can clean them off and make necklaces or bracelets with them. I made bracelets for my wife and daughter with some. The meant works well as cut bait for catfish too.

I read they were for hearing and sensing they are up in the brain area not in the mouth or digestive track are you thinking of sheepshead from brackish and saltwater ?

The discs are similar to ivory. Used to always save them.

You just threw away one of the best tasting part of the entire fish! On bigger fish. I always save the heads and collars. Unless I plan on eating them in a day or two I half them, remove the gills, clean the insides of both halfs and freeze them. Until I am ready to use them. They are great just baking with a little salt, pepper, butter and sliced lemon. Wrapped in foil. Or bread both halves and Fry them up. Or boil The heads straining out but keeping the water for stock. Letting the heads cool while cooking whatever vegetables you like in your fish soup or stew. Once the heads are cooled you can easily remove the bone free meat and put it into your soup. Or if you like. Just put the halved heads back into the soup. I like making mine with a good spicy curry powder. It's delicious. ( I knew one little girl who just loved eating the eyeballs. I've never tried the eyes myself. But she said they were delicious. )

That actually sounds pretty good! I have never gotten that adventurous with fish heads. I have never made fish soup either! Thanks for the tip

They are actually made out of calcium carbonate, they look like shiny ivory, but they’re not ivory.
