Pineapple Boiled Fruit Cake #35

  • This is an easy, moist fruit cake, excellent for Christmas or any time of the year.
    Recipe: Pineapple Boiled Fruit Cake
    ingredients:
    500g Mixed dried fruit
    1 1/4 cups canned crushed pineapple
    200g glace cherries
    1 cup brown sugar
    155g butter or margerine
    2 eggs
    1 cup Plain flour
    1 1/4 cups SR flour
    1 tsp mixed spice
    1/4 tsp bi carbonate of soda
    Method:
    1. Grease a deep 20cm deep round cake tin with melted butter or margerine and line base with baking paper.
    2. Place dried fruit, pineapple (including juice), sugar, cherries and butter in a heavy based saucepan. Bring to the boil, then lower the heat and simmer gently for 5 minutes stirring occasionally
    3. Remove pan from heat and cool.
    4. Beat eggs together until well mixed, then stir into the cooled fruit mixture.
    5. Sift the flours, mixed spice and bicarb together and old into the fruit mixture.
    6. Spoon cake mixture into prepared tin. Bake in a moderate oven (160c fan forced) for 1 to 1 1/4 hours or until golden brown and a skewer inserted in the centre comes out clean.
    7. Allow the cake to cool in the tin.
    8. If you like, while the cake is hot (straight from the oven) pour rum or bandy over the top, up to 1/2 cup.
    TIP: If you find the cake burns on top, cover with a double layer of baking paper while cooking.

    You’re cake recipe looks good. I noticed your cakes looked like they were caught at the edges.I’ll be taking your advice to cover
    them if I think they are over browning 👍

    I may have missed this explanation but why do we need to leave it overnight in the fridge? What does it do to the mixture?

      Sorry, I should have explained that I made it very late in the day and as it needed to cool before adding flour and eggs, it was late in the evening and rather than leave it sitting out overnight I popped it into the fridge until I was ready to finish it the following day. It can be made in the one day if you have enough time for it to cool before the next steps. Thanks for your question and thanks for watching.

    It's "mar-jar-in", not "mar-jar-een". Margarine is so full of chemicals, it's one molecule away from being plastic.
    Butter is 100% natural, and much healthier.

      Thanks for pointing out that people in different countries pronounce words differently, neither pronunciation is incorrect. It just depends where you live as to how you pronounce it. In Australia it is pronounced the way I say it in the video. But it's ok that we say it differently, because you obviously knew what I was talking about. Thanks for watching 👀 🙂

      I baked one similar to this yesterday.
      It burns very easily on the top and sides.
      A fan forced electric oven doesn’t help either. So hot.

      Why do you use plain flour, instead of all SR flour?

    We not supposed to boil fruits only ifnwe are makeing fruits it self we soke the fruits with red wine and we blend it soke it for one week or lest we do not buy the fruits and boiling it to bake that cake

      How ridiculous. Of course you can boil fruit. I’ve been doing it for years. This recipe is for BOILED FRUIT
      Who would want to wait a week for the fruit.?
