Enjoyed the video! I try to forage along all the trails I hike and have a list of about 50 edible plants I have found along the three long trails in the US. Surprisingly the place with the most easily accessible food is the desert. When I hiked across Ireland I didn't get much of a chance to figure out the wild edible plants, but I am planning to head back to finish off my 2nd crossing, and then probably do the North to South trail, and hope to learn a lot more about the plants then. I will say that as someone who has spent more time in his tent in the past 6 years than in my bed at home I don't believe cell phones are the problem. Nor technology as a whole. It's the complete reliance on them is where I see the disconnect. When my friends and I hear people complain on forums online about people enjoying listening to music out in the wilderness and how they should just enjoy the sounds of nature we think.. Well, you need to spend more time in nature then. Because we hike for 6-7 months a year in nature and the sounds of nature to us are just normal. And music is fun and relaxing. As far as cell phones, I often take pictures of plants I don't know, and then later look online to find out what they are. They are useful tools and can help connect to nature. Or they can disconnect you. They're just tools and it depends how you use it. Well, that's my 2 cents anyway.
Oh how wonderful to share such knowledge, and ‘re-educate’ us to our forgotten knowledge of wild foods. Thank you so much for introducing us to Craig. What treasures you both are!

Love this video! It's so fascinating! This is what we need to be teaching our children as well. Going out in Nature and teaching them to live off the land., instead of them sitting inside classrooms and just keeping them busy when parents are at work. I would love this way of teaching and learning. It's just awesome! That lasagna looked good! I never even thought we could eat acorns or acorn flour. I am truly intrigued now! @@DanusIrishHerbGarden Hi Danu, i think allot about the problem of Rhododendron ponticum growing so much and the other day i was walking in some fairy woods here in Wales, (Ty Canol) and i had something ask me "has anyone tried to have a conversation with the Rhododendron? or perhaps you should actually ask the plant to stop growing so much and if it knows its own vigour and that it is affecting allot of nature with its exitment" i am now thinking of how i can communicate with the Rhododendron and have chat. Do you have any ideas? I often find answers at a cave here in wales which is on a high energy vortex, very powerful. I will take some of the plant with me to the cave for the next ceromony in a couple of days, this just came to me as i have typed this to you !

I live just outside the city. And after learning about some medicinal mushrooms, I went to the woods and found Turkey tail on different types of logs , i was so delighted! Made some tea after dehydration and absolutely enjoyed it and i have some in the jar for hot water extraction! There were other jelly like mushrooms also edible, but the ones I haven't learned about yet I don't pick, just to be safe.. 😊 Thank you for all you do friend! See you on Sunday! ❤

I have scoured the www looking for a recipe for those minty candied birch catkins! I figure this is one of his original culinary creations? I would like to learn how they were made. I could probably figure it out by adapting other recipes or by trial-and-error... is there a resource anywhere that explains the process and the measurements? I live near lots of birch so gathering the catkins is not a challenge. :-)
My assumption is it would start with an alcohol tincture of peppermint, and then use a tsp of that minty alcohol mixed with egg white to coat the catkins, then dust with superfine sugar; air dry or give it some time in a dehydrator. Store in an air-tight jar with a food-safe dessicant.
Have a look at Craig's website - the link is in the box under the film. Craig says it is quite a long process to describe here so suggests you follow any candying recipe such as John Wright's candying Alexanders. Hope that helps. You can contact Craig via his website. xx

I would like to try foraging but around my area the countryside is all private farmland which is basically covered in pesticides,herbicides,fungicides,lime,slurry etc animal waste from cows and sheep.Are there any truly wild areas in Ireland ?
When I hiked the Irish Coast to Coast walk, I didn't see too much I would call wild until I got to the Blackwater Way, and along the Kerry Way and the Beara Way. So south west, quite beautiful and a bit more wild.

My assumption is it would start with an alcohol tincture of peppermint, and then use a tsp of that minty alcohol mixed with egg white to coat the catkins, then dust with superfine sugar; air dry or give it some time in a dehydrator. Store in an air-tight jar with a food-safe dessicant.

@@DanusIrishHerbGarden Thank you! I found the recipe he is comparing to. Alexanders don't grow around here but it's cool to know I can adapt that recipe to other weedy treats. The method I assumed was what I would do for candying things like lemon balm leaves or sliced cantaloupe. (for candied cantaloupe, add a little powdered ginger to the sugar! Mmmmm). Take care!

I would like to try foraging but around my area the countryside is all private farmland which is basically covered in pesticides,herbicides,fungicides,lime,slurry etc animal waste from cows and sheep.Are there any truly wild areas in Ireland ?

When I hiked the Irish Coast to Coast walk, I didn't see too much I would call wild until I got to the Blackwater Way, and along the Kerry Way and the Beara Way. So south west, quite beautiful and a bit more wild.
