  • How to delay or stop vegetables from bolting? Weather in Los Angeles is quite unpredictable. It's mid-winter and while the rest of the country is covered in snow, we are having a spring-like weather which makes the plants, especially the lettuce and Asian greens, send flower stalks to seed or bolt. So how do we prevent or at least delay the bolting process?

    Thanks for sharing. I just started my FIRST garden here just north of you in Oakland, CA. My purple bok choy started bolting a couple of days ago, after a few very warm days, and your video helped me a lot. I've only had floral gardens in past, this is my first vegetable one, and it's a fairly small urban garden. I love your freckled lettuce 😊

      Hi Kevin, that is very exciting! Gardening is fun and rewarding in many ways especially these days. We started with flowers too, but have now converted most of our backyard into an edible garden. Veggies and fruits taste so much better when homegrown.       I usually sautee them in olive oil with garlic and chicken/vegetable seasoning, sometimes with a little bit of balsamic vinegar. Another option is to steam them. Have a happy and blessed Sunday!

    Thank you for talking about bolting - no others share this much info. Could you please share more about that - like the edible quality changes? For example: my bok choy bolts every time the weather gets hot for a few days, even when the plants are still babies. So I have been eating those plants if they have only formed green buds, but not sent up a tall stalk or produced flowers. (my replacement plants also bolt) Would you eat the leaves yet if the plant had tall stalks and flowers (not just little buds) - or will they be bitter when they have big flower stalks, like lettuce when it bolts? (I've been afraid to try it after it flowers that far). I'd like to try your method of cutting out the bolting part of the plant - but - when you do cut out the top center, does the plant continue to grow new leaves? I love bok choy but struggle with the weather swinging. My bok choy seems to ignore snow, which was great, but the least bit of heat (mid-80s F) and it bolts. I grow in containers in zone 5. Thank you!!

      Hi, they tend to taste bitter when the flower stalks are taller. If you pinch them early, they will produce more green leaves, but will eventually continue bolting if the soil is already warm. Asian greens like bok choy and tatsoi are more sensitive to weather changes and would bolt faster than the other leafy greens. Once they have bolted, I would not replace with the same variety as the replacement will most likely bolt very young too. I am more successful on pinching the flower buds of Swiss chard and kale which ended up as perennials in our garden. Thank you so much for watching and happy gardening! 🌱

      Yes, you can still eat the leaves.They should taste the same if the plant just started bolting, but will turn a little bitter if you wait a little longer. Thanks for watching!
