You'll find Chinese vegetarian dishes just as tasty as non vegetarian dishes as they are typically garnished and cooked in the same way using soy sauce, garlic, ginger etc. and the availability of do many different types of tofu as a meat substitute where each has a unique texture to them. Honestly, in my opinion and experience I have nothing bad to say about Hong Kong! Everyone was very friendly and helpful, food was amazing(!), never felt unsafe at any time and generally you should be careful in any city when it comes to your belongings. ♥️
In the busy small local restaurant in tourist area, waiters may be rude or pushy. In other places, waiters are generally polite, food is pricy, city is very safe.

I went last year. These days, you don't need bus. Just subway and walk.
