    I suck at sharpening as well. Luckily I live near a shop that sharpens knives at a very reasonable price.

    I just purchased a much cheaper fixed angle system from a brand you mentioned in your video. I'm curious as to what sharpening technique you believe is best: Pull down, Saw, sweep, push, or other?

      Yeah, that's where I'm not sure my advice is worth a lot. But fwiw, I tend to do mostly push or back and forth when using the stones. Strops I always pull away from the edge.

    do you incorporate a butcher steel at all in honing the edge of your knives after you put an edge on them with a tool like this?
    it's another kind of like skill to learn, but it will help keep more material on your blade for longer because a steel doesn't really remove material or put an edge on a blade, it just hones and polishes the edge once you get it sharp.

    have you looked at gaggiuino? ever since i've watched your bluetooth scale video i've been hoping you'd tackle gaggiuino and personalize it so I can ask you coding questions about it lmao

      Yeah, I actually have a Dexter Russel butcher's steel. Works well, but I generally use it on a knife that's already been used for a bit. I've also got a leather strop that I'll sometimes do a little work with after I finishing sharpening.
      I did look into the gaggiuino! That was actually the original reason I got the Bambino, to use it as the base for a project like that. I thought the drip tray could be modified very easily to incorporate load cells for weight control. But once I saw the lack of steam control, I nixed it.
      The reality is some of those projects take a ton of time, because I'm not a great programmer or electronics engineer... I have to bash my head into the wall a *lot* to get those things done. I've been telling myself I'd redo my annealing machine control system for over a year now... but I am too intimidated to start on it. :-D

      Learn things because "someone else did it so I can too" kinda thing lol
      Gaggiuino is awesome and I bet you'd love it, I don't think it would work on bambino because of the heater coily thingy. But literally any machine with a boiler on it you can put it on :)
      I learned how to code enough so I could make it it have touch screen start/stop brew and steam, set my steam temps, stop on weight or time.
      I have some videos if you're bored lol
      And playing with an annealing machine sounds fun ahhahaha

    on the back of the clamp is a place to zore.

      There are a few flat spots. But the clamps can get deflected a bit, so I find measuring something held in the clamps to give the most reliable indication.

    Overthinking big time....
    My late dad handed me his pocket knife decades ago when i was around 10.
    "Sharpen it"
    "You almost got it. Find the edge and do it again"
    Don't need all that crazy stuff at all. Coarse, medium and fine and rarely use the coarse stone. Use oil or water. I use oil.
    18 to 22⁰ angle; normally.
    Lock wrist, find the edge and work with your elbow.
    Fairly simple 😂.
    Y'all getting way to complex to simply sharpen a knife.

      If those tips had worked for me, I'd have stopped with the water stones. Like I said... I'm bad at sharpening. LOL.
