OLD SCHOOL BREAD PUDDING WITH VANILLA SAUCE

  • RECIPE
    FOR CUSTARD
    2 quarts diced bread (broiche or French bread)
    6 eggs, beaten
    4cups milk
    1 cup white sugar
    1 teaspoon ground cinnamon(optional)
    1 teaspoon vanilla extract
    Directions
    Preheat oven to 350 degrees F (175 degrees C).
    Slice or dice bread into small pieces into an 8 inch square baking pan. . If desired, sprinkle with raisins.
    In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
    ( you can also heat the milk and sugar and then add the eggs to it )Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.
    RECIPE FOR VANILLA SAUCE
    4 egg yolks
    1 cup heavy cream
    1 tsp vanilla
    1/3 cup granulated sugar
    heat milk,vanilla and sugar in small pot until boiling
    add 1/2 hot cream to eggs yolks in bowl
    mix together and add back to small pot
    simmer for 1 minute and cool
    serve with pudding

    The Old Southern recipes are the best. I can’t wait to make this & the Vanilla Sauce. Yummm. Thank you so much for sharing such a wonderful recipe I love a good bread pudding. So many don’t use the water bath method but I think it gives you a better end result.

    Hot custard sauce is a must as a traditional accompaniment for so many hot puddings in GB and cold we use it in trifles and fruit fools. Hot or cold custard with bananas sliced into it was a childhood treat.

    Another dessert that grandmother made and cut it in squares after it was done and cooled . The vanilla sauce I've never had on it , that sounds yummy .

    What a beautiful dessert. Mine was so gummy , I stopped trying to make it. I really did not know how to make it properly. I mixed all the ingredients together and stuck it in the oven.I got it now.

    Hi Chef Jeffrey, I really enjoy your talking and showing how to be a better cook, you are an excellent teacher. If you ever travel to northeastern Pennsylvania, you have a place here to stay. Now questions!!
    I have an Emeril deep fryer and use peanut oil. Is it alright to leave it on the counter after using or must it be refrigerated ? Also, I use Hormel Thick & Easy for thickening gravy, do you ever use it in place of flour, cornstarch, or arrowroot?

      Thanks for following my channel Yes I have used that thicker before. It’s awesome for cold items that needs thickened. Also yea. I leave my deep fryer on my counter with the oil in it. It’s definitely ok.

      I think oil can be left out but it should be sealed from rodents. Grease left out attracts mice.

      I don’t make homemade pie crust. I can. But it’s a waste of time when u cook as much as I do. It’s much less time consuming to buy mine

    My grandmother used to make it and cut it into squares. It was dense and sometimes referred to in the south as "lead bread" and you didn't see the chunks of dried bread. Her recipe also included raisins. Is this one of those foods that is different depending on the region you live?

      That may very well be the case. I grew up in Atlanta and my mom, who was from the country, made that heavier version. It was firm (like dressing) and quite delicious with raisins. She used all the stale bread in the house: sliced bread, biscuits, rolls, and even cornbread. Then grind them all up together and let it soak for hours in the warmed wet ingredients. Never had a sauce topping but I will definitely add the lovely vanilla cream sauce 😋.

    I'm from Mississippi and my mom would make bread pudding, but she would make homemade biscuits to make her bread pudding. When we moved to Wisconsin she would just go to KFC and buy a dozen of biscuits. She mixed everything in one bowl. Put it in a baking dish. Bake for 45mins. It was delicious.
