Cook the spine. I did a roast with chicken stock in the pan with the chicken and we put the spin in for flavor and the best part was the meat off the spin

Ok I found out what spatchcocking is, fine, looks yummy, I’ll try this recipe
Spatchcock is a great way to ruin the flavor of your chicken/turkey. Cooks faster but the meat is very bland as much of the seasoning will burn off in the cook. Also easier to overcook resulting in a dry bird. Bleh
She basted it which helps but then you’re standing over the pellet grill which defeats the purpose of the “set it and forget it” part of pellet smoking. Substitute cheesecloth over the bird to achieve a better basting process and a less burnt outer layer. Using cheesecloth also allows you to drink more beer and watch the game instead of babysitting the grill. 😂
Instead of spatchcock, stuff the cavity with lemon slices, celery, carrots, chopped onions, thyme or rosemary and a few cubes of butter. Much better flavor

A little butter is two sticks. Got it!
3 things:
1. Don’t open the grill every 15 minutes. You lose heat stability.
2. Increase the heat near the end of the cook to crisp the skin. It definitely looked rubbery in this video.
3. Let it rest!!! Do not slice right away. You will lose the juice.

Basting every 15 minutes means you're losing precious smoke. That's not smoking. Low and slow is the way to go.

I wanted to see how the dark leg meat looked when done because I hate when leg meat is all watery and under cooked. I always thought that legs take longer than the breast and wings.
