That swan was incredible. I've seen others that you get what they're trying to do, but you kinda have to know what it is to see it. But his truly looked like a swan!
Thank you so much for making an “alternative milks” video. I really needed these tips for making latte art at home. I realize now that I’ve been over heating and over stretching the soy milk. love my whole non-pasteurized milk and practicing latte art with it; but don’t want to drink dairy during winter months. Your latte art is fantastic and gives me hope!

Those are lovely pours. I wish I could steam milks to such a low temperature, but so many customers come in and ask for their coffees "extra hot." Sigh.... Not sure what's worse to be asked, "extra hot" or "no foam" when making a latte. I've learned to just completely ignore the request for "no foam." Assuming they only mean that they don't want baby barista cappuccino soap bubbles.

No foam means no Starbucks style soap bubble foam, since it’s useless and doesn’t get consumed. It ends up just wasted space. In their minds by asking for no foam they’re optimizing the amount of latte they get. A truly good latte will have the foam incorporated into the milk. But most cafes don’t produce those kinds of lattes since they’re a lot harder to make and they don’t really train them to make it anyway.
With extra hot I pre-heat the cup really well with hot water. A lot of times the cup will sap a lot of the heat away by the time you drink it. If they ask for no foam I might do a flat white style milk rather than literally no foam.

I'm almost sure that they're using an almond milk blend. Not dairy, but something that adds some fats to the milk that keeps the foam stay for longer.
He's using milk lab almond milk. It's amazing to work with and if you use it you'll definitely notice the difference.

Funny enough, I feel with Almond you can texture it really well compared to soy haha. I think it's all temperature maybe.

It's motivating to see this done so well with all of those milks! Since the entire process is finished in 10 seconds or less I've been having trouble, but this inspires me to keep practicing. Cheers
Thanks for the info and tips, still need to learn how to create some foam from the milk. And I never knew that you can create some foams with Almond milk, oat milk & soy milk. It looks easy when seeing you making those designs on the coffee... but I guess I need lots of milks to practice...

Looks so good!!! How do you know it’s the right temperature without a thermometer? We don’t use one at the cafe I work at and usually the temperature we aim for is 60-65C.

I recommended it, the Kirkland Soy milk from Costco. Is the best for this and others things.

Okay that machine steams to 50-55 REALLY fast. Do commercial machines just output more steam in a smaller amount of time or something?

Thanks a lot for this great video. I can follow your tips and make excellent latte art with Oat Milk. However, I tried multiple brands of Soy Milk. Including barista series ones. It looks like the stretching is happening fine; it looks like wet paint, etc. However, when I pour, all I get is a blob. How to fix it? Please help.

I have heard and from experience that it's not just AIR that thickens the milks but Protein content(probably why coconut milk is the worse for frothing). As the milk heats, it cooks and bonds which thickens it, and it's also what gives HOT lattes the unique sweet taste which iced lattes seem to lack because the milk is not heated first. What's your take Justin?

It seems that soy and oats are at opposite ends with soy having all the protein and no fat, and oats having all the fat and no protein So, is it a good idea to mix the two?

You say the milk continues to heat up after removal of the wand, but where does the energy come from for that? Could you actually show a video of the thermometer continuing to rise after steaming finishes? How long for? As someone trained in physics I am utterly intrigued!
Yes I could do a video on this! I guess it would be better explained like cooking a steak though.. where you have a cooking process of temperature over time, with absorbed energy that continues to cook the steak. It is best to stop heating the milk earlier on to manage the cooking processes.

Is there a recommended amount of fats, protein and sugars that non dairy milks should have to obtain these results?
I wish I could just send this to my favorite coffee shop in town. They do beautiful latte art but only if you order cow's milk. I have switched to almond for the sake of my health. I make my own lattes at home and I make a better almond milk honey latte anyway but I never could master latte art unfortunately, even with cow's milk. I will try and give this a shot though. Hopefully practice will do me good.

Not all almond milk steams the same. But you should be able to get a decent micro-foam from most of these milks, focus on getting the bubbles injected in to the milk slowly and bit by bit during the time you raise the temperature. The bubbles hold better as the milk temperature is higher in these alternative milks.

That's perfect! But what is people ask for extra hot? Would you still make latte art?
Latte Art will be very difficult to do in this situation.
As an extra hot drink you will need to be texture the milk longer to get it to reach temperature. During this process you will alas also add more volume to your milk and it will become very frothy. Make sure you pour off some of the froth be fore your pour.
Alt. Milks will burn just the same as regular milk and will pass on a negative taste to the beverage.. so I wouldn't be heating the milk more than 75cº at most.

Can you make a tutorial with coconut milk as well? I work at a store that only has soya and coconut milk as alternatives and the struggle is real when it comes to latte art.

coconut wont foam unless I mix in another milk. They do make a Almond/coconut blend and that works.

131 degrees Fahrenheit seems kinda low but if alt milk continues to warm after steaming then, ill have to test that myself
We use pacific brand barista series almond milk. It’s great and taste great. Foams like Milk but no chemicals.

What about coconut milk?
Coconut we've found to be the thinest and hardest to steam. Perhaps this deserves it's own video :D
