Roasted Cherry Tomato and Coconut Milk Soup
Ingredients:
2 pints cherry tomatoes
1 head garlic (whole)
1 yellow onion, roughly chopped
1 bunch fresh basil
1 bunch fresh thyme
Pinch of red pepper flakes
Salt and pepper, to taste
Healthy drizzle of olive oil
½ cup vegetable broth
½ cup coconut milk
Instructions:
Preheat the oven to 480°F (250°C).
Spread the cherry tomatoes, whole garlic head (with the top sliced off), and chopped onion on a baking sheet.
Add the basil and thyme sprigs to the pan, then drizzle everything with olive oil and sprinkle with red pepper flakes, salt, and pepper. Mix until everything is well coated.
Roast for 25-35 minutes, or until the tomatoes are soft and slightly blistered, and the garlic is tender.
Squeeze the roasted garlic out of the skins into a blender.
Add the roasted tomatoes, onions, basil, thyme (remove the stems), and any pan juices.
Pour in the vegetable broth and coconut milk, and blend until smooth.
Transfer the blended soup to a pot and heat gently over medium heat until warmed through.
Taste and adjust seasoning with salt and pepper if needed.
Serve hot, garnished with fresh basil and a little crème fraîche if you have it.

I haven’t done the cookies yet but I did the breakfast with yogurt, and I did the salad lunch. I work from home but it’s so easy to have a salad in there ready to eat and healthy. Also the breakfast. Yes the sprinkling of everything makes me happy too. I grow and dry my own basil and it makes everything taste so much better.

really admire you alternating lifestyle vids with straight up scientology vids. a smart way to balance things out and stay healthy. i couldn't dedicate a channel to just one thing, esp if it meant revisiting a harmful or traumatic topic over and over. smart move.

For garlic fingers -- if you rub your garlic hands on stainless steel (handles, cutlery, taps), the smell goes away! It's actually kind of amazing.
A chef friend recommended keeping onions either in the fridge or the freezer to help minimize the eye sting. I've done it that way ever since and it seems to help a lot!
I grow so many varieties of tomatoes and I swear by the yellow sunsugar variety because they turn the soup the MOST beautiful color in the end 💛 I’ll have to throw a bundle of thyme in next time I make it :) thanks for sharing

You could try a different variety of onions. They're not all the same. One year, all the onions from the local grocery were so strong and terrible, I had to wear swim goggles. It was hard to see, but without them, it was impossible to cut the onions.

Loved the tomato soup recipe!! To chop an onion I put a wet paper towel on the cutting board when I'm cutting it. I read that the onion is looking for a source of "water" and will go to the paper towel versus your eyes. Totally works for me!!

I am so thankful for finding your channel. I’m sorry that your experience with growing up was so traumatic. I had access to my parents and wasn’t raised in any cult; however, my parents didn’t want to be in parents and I had a lot of trauma in my life. One thing I can see is that your face wears the systematic removal of your individuality. I’m autistic and always needed to watch how my face coming off, and I’m emotive with my face because that’s what I saw others doing, and to me, it feels fake. So the way you don’t attempt to cover it is really refreshing. Much love coming your way.
Yum! I might try it (no promises) about the onions. I see you cut the onions in half then quarter and leave on the nubby part that holds it together. From there make sure the sliced part is away from you. That’s where the juice comes flying out. Watch that part of your video again and see if that makes sense. Live your videos 💜

Thanks for sharing! I like to use better than bouillon brand for stock. It comes in veg, chicken, beef, Italian. Great flavor and lasts longer 😊

I love this recipe! I have made a much more basic tomato soup but this really elevated my recipe and I am looking forward to making it soon. FYI I also add bacon and a touch of sugar which cuts the acidity a bit. Thank you so much for this, it's this kind of content that mitigates the trauma and makes the trauma more palatable (pun intended!) 😆🧡

Being in a well ventilated space will help with cutting onions, open the windows or cut them outside or have a fan blowing the onion smell away from you

I can't cut onions without my eyes watering like crazy.... I wear swim goggles, and it helps a lot. Although you do need to periodically de-fog them so you can see.

I react a lot to onions, too, sometimes even green onions (which are usually the safe ones). I love roasted garlic! I peel the garlic first though, only because I don't want to leave any of that yumminess behind. Keep these fabulous videos coming. I love seeing you in your beautiful home. 🌻🌸💖🌸🌻

lol I cry but I don’t sob…some have said fridge them first can help.
Cut both ends off the onion, peel, then put under running water for 5 minutes
Or put the onion in the freezer 30 minutes before you cut it up. Either method will keep the essence of the juice from getting in you eyes.
Eat a piece of bread when chopping onions. No tears. Touch your knife against stainless steel (faucet or sink). Smell instantly disappears!

BTW I wear contact lenses and have never felt the effects of cutting onions! 😉
My favorite way to keep from crying when chopping onions is to put them in the freezer for about a half hour before chopping them and then cut them in front of a fan that blows the air AWAY from you! Lemme know!

I heard putting a piece of bread under your tongue helps with onions 😊. If you have sterling silver spoon rub your fingers with it after touching garlic and it takes away the smell

Chopping onions! Put them in the freezer for 10-15 minutes or so... just to chill out the splash factor. I swear, my eyes 👀 are watering just watching LOL 😆. I'm so happy for you, sweetie. Keep on healing and enjoying life and all it has to offer in all seasons. ❤
I do this, also. I can’t remember where I first heard this cuts down on the chemical/enzyme that causes tears, but I’ve used it for years.

About cutting up onions… And not crying… Place a piece of bread in your mouth on your tongue and just hold it there… Do not swallow… That usually takes care of it. after you finish with the onion spit the bread out into the garbage
let the water run in the zink while cutting.Stay close to the zink of course.And the onion prob is solved
If you'd use a cup of boiling hot water to clean out those flavors instead of your cold stock You would gave gotten even more of those delicious flavors out of that pan into your soup....I'm making your soup tomorrow Thanks.
Use a small fan to blow the onion oder away from you!!

Sounds weird but if you hold a toothpick between your teeth while you chop it helps. Also I have a small food processor that I usually use to chop my onions. Just need to throw in chunks.
Does coconut milk taste like coconut? Sorry for the crazy question, but not a huge fan of coconut. The soup looks amazing
