  • Rose's Lime Juice / Cordial was created in 1867 and was the world's first fruit concentrate. It was the accessible and necessary sweet fruit preserve of choice by sailors to take their daily dose of vitamin C to fight off scurvy. The Rose's brand isn't readily available in some countries, this DIY Lime Cordial recipe is an excellent substitute and a crucial ingredient in a Gimlet. The Gimlet was featured in Harry Craddock's The Savoy Cocktail Book in 1930.

    **I said 30mL of lime zest by volume (or 5.5g) but the original recipe states 45mL (or 8g). The original recipe is below.**
    INGREDIENTS
    LIME CORDIAL
    - 400mL Simple Syrup
    - 17g Citric Acid (30mL by volume)
    - 8g Lime Zest (45mL by volume)
    - 45mL Fresh Lime Juice
    SIMPLE SYRUP
    - 250g Water
    - 250g Sugar
    - Makes 400mL
    METHOD
    1. Add all the ingredients to your blender jug
    2. Blend for 20-30 seconds
    3. Fine strain and bottle

    This is a BANGING lime cordial recipe - make sure you try it with a gimlet or a grog (with rum). I actually used a little less lime zest than the recipe (by mistake), using 30mL by volume instead of 45mL. It works either way but best to add that little bit more zest. Adjusted volume/weight is in the description.

      Great recipe Steve, gonna need to try this out. You should check out an oleo saccharum to kick it up a notch. Zest your limes into the sugar you'll use to make the simple syrup and let them sit for a day. The sugar pulls out all the oils, then you can dump that in the sauce pan to make your simple syrup, let that cool and add your lime juice. Typically an oleo saccharum is used in punches but I think they work well in juices or cordials. Can't wait to see the next one!

      I never blended zest for my cordial before. I always cold infused it instead. I'm quite curious actually. Will give it a try no doubt. Cheers!

    I’ve made this about 5 times now... best gimlet ever! Never go back to the green stuff from Roses. Even make a Sloe gin / Rickey version with 3/4 oz of Sloe Gin, 1 1/4 oz of London dry, 3/4 oz of Lime cordial with an extra squeeze of fresh lime juice and top with soda.

    I made some amazing grapefruit cordial using a similar method but I made the base an oleo saccharum. The most intense grapefruit flavour. I might have to make some cordial tomorrow. The days are heating up and a bit of this and some soda is perfect after the Saturday morning chores.

    When I saw that Rose's Lime juice (made from concentrate!) costs $6 per 12oz bottle...I decided to try your recipe. No comparison!!! I'll NEVER buy/use Rose's again...Thanx Steve, for upping my appreciation of citrus mixes with my spirits!

      It is quite tangy so if you don’t like lime then this might not be for you... perhaps adjust the acid to suit..

    When i measured the citric acid i got that 30 mL weighed almost twice as much as the 17g you got (32g). I wonder if it depends on the particle size of the crystals? I ended up adding 17 grams and when the infusion is done i’m gonna use two bottles and add more citric to one of them and compare 😊.

    Drinking Bourbon, learning to make cordial for a gin based drink and ordering citric acid. Not sure that is what I was thinking I would be doing later in the day when I woke up this morning. 😂

    Steve I work with a mobile bar service, natural lemon juice oxidizes after a while, could I add citric acid to preserve it for the 5 hours of the event? or what would you recommend?

      I wouldn’t add citric acid as it would make it far too acidic… use it same day and it will be fine 👍

      Not sure if there is a distributor for bars to get... can’t say I’ve ever seen it in a bar. There are a couple websites that sell it in Australia..

      angel_wings yes, still use fresh lime juice for other cocktails.. it’s only a Gimlet or a Grog that this cordial is specifically called for..

      Apparently limes have 1.4g of citric acid per 30mL (1 ounce) - so its the equivalent of about 12 limes citric acid content. Citrix acid should be pretty cheap and easy to get a hold of as it’s a common ingredient in baking..

      Measured by weight rather than volume... 250g of water + 250g of sugar = 400 mL of dissolved liquid. The sugar isn’t as volume dense as the water.

      Paul Collegio, forgive me if I’m wrong but perhaps it maybe because he did add in citric acid in there. Which citric acid itself it’s pretty sour tasting this reducing the amount a lime he need.
