Or even simpler is equal parts, let's say 100g citrus peel and 100g sugar. Mix well and leave until the oils have been extracted into the sugar, then stir in 100g boiling water. Strain and store in the fridge. It works with all sorts of citrus peels and sugars, but obviously needs balancing in the final drink as it is pretty sweet!
Just my opinion but wouldn’t you be better using the oleo citrate /superjuice method first then balance with the sugar? I’ve done that before just seems you may get more yield.

Nice videos. How long can i keep the cordial in a fridge ?
Hi Dan, I have a concern that the process have to keep in 18-24hours, then you added the fresh squeezed lime juice from the beginning into the mixture?
I keep the lime juice in the fridge to keep it as fresh and vibrant as possible. Usually I like to use lime juice ASAP but in this recipe you still get lots of vibrancy and zing
In the flavor what would you say is the ratio of simple syrup to lime juice?
Ie if we were making a margarita that had 0.5oz lime and 0.25oz simple syrup, or 2:1, what would say the ratio is lime to syrup in this cordial?

Thank you! Obviously use your own judgement, but I’ve had this in my fridge for a few weeks now and it tastes just the same 👌 I think it should last longer than it takes to drink, especially if you scale the recipe up or down so you don’t have too much. As with anything, don’t drink it if there is any fizziness or mould, but I have yet to experience that personally in the few weeks it took to drink. It’s also really good in a G&T or with sparkling wine for some super refreshing serves 👌
Would the balance be improved by zesting the limes and using the zest plus the juiced flesh and then add the zested, de-fleshed peels as needed to get the 50grams of lime for the liquid? The idea being to minimize the amount of pith that makes up the 50g of lime solids?
That would work really well; the intention of blending whole was really to save time on having to zest limes which can be tedious and maybe off-putting, but for sure it is a great idea! I personally like a small amount of pithy bitterness that the whole husks bring, but the zest method would definitely reduce this and suit those who don't like any bitterness.

Could you theoretically do the same recipe but with lemons or would you need to adjust your ratio of citric and malic acids?
Absolutely. Lemons are generally a little less acidic than limes, so I would personally reduce the acids by around 25% then you can always add more if you need.
What would you say the shelf life is on the like cordial plz?
I had mine in the fridge and it tasted great for over a week. You can add some alcohol to extend this also, or adjust the batch size to avoid any excess.

I apologize up front for the ignorance... is lime cordial the same as lime "super juice"? If not, what is the difference?
Also, will the lime juice not oxidize when waiting on the sugar and acids to do their thing? I thought lime juice was notorious for oxidation issues?
@woodcookers408 I was thinking the same but I know we would have to up the sugar content in our super juice to make it a cordial. I do love the content that gives you formulas to plug in for different amounts.
After making it, how many days can it be stored?
I don’t have a way to test scientifically, but I have personally had it in the fridge for around a week with no issues. Always use your judgement and if there are any signs of spoiling (mould, dizziness etc) or degradation in flavour, or you have any doubts, make sure you don’t consume. You can always freeze it and defrost when you need, or scale up or down the batch size. Or both 🙂

I was keeping it simple and close to a classic Daiquiri profile, but saline definitely would do no harm!
