This pasta with porcini mushroom is easy, quick and very Italian! Tagliatelle, porcini mushrooms, garlic, and parsley is all you need. I did it with dried mushrooms that is easiest to find but if you are from the lucky ones, you can do it with fresh. I had to dig through 10 videos before finding someone that reuses the mushroom water... This video should be at the top of the list! If anyone is contemplating this method, you MUST try it! Delicious.

Thanks Zac M. That water is full of porcini flavor and it certainly makes huge difference if you use it 😋

I don’t care for parsley. Is there something else I could add to substitute? that would be good
how about green i onions or arugula?

also, I have seen some Italians make this pasta with a tomato also - what do you think about that?

Con i porcini le tagliatelle sono il top! Anche i finferli (galletti) non scherzano.. Un buon misto e via😋

Hey Thomas? You mean to make a nice dense sauce? Just take with a big spoon a little of the water where you boiled the pasta and add it to the pan! Put the temperature in high and add a couple drops of olive oil !! And you are good to go!! Be careful not to overcook the pasta, please !!! Al dente !!!😉

I just wonder what would happen if we cook pasta in the porcini water. The mushroom flavour would infuse with pasta. I need to try.

Well, I guess you could. But as you need a lot of water you will lose the flavor of the porcini. Keep me updated 😉for the result

Once you have dried the pasta, that’s a good idea to use the leftover water to add to the boiled pasta

My Hungarian friend used Porcini muchrooms in recipes she learned as a girl. She loved the woody earthy smell and taste. The Porcini was no longer available after the Russians came in. As a substitute they used dirt and wood from a fence.

Don’t tell me you put whole of it! I wrote “some”... anyway all of us have made these kind of mistakes especially when we are not sure! You know what? For me adding small portions always works better, I try and then I add more if needed. Thanks for trying my recipe ☺️

thanks for the vid...but there are some little mistakes. bring your oil to high temperature before adding the garlic so it doesnt soak up all the oil. the garlic should only sweat and not be brown otherwise its starting to get bitter.

one of my favorite ways to eat garlic is to brown it quite dark. browned in butter it makes an excellent dipping sauce or to put on vegetables. shrooms being my favorite pairing with them
