I have spatchcocked a 24 lb. turkey and a smaller roasting hen. The cooking time is cut in half. The dry brine that I used consisted of 2 TBL. of Baking Powder and 1/2 cup of salt. It was phenomenal!! Even days later when we had leftovers the Turkey was super moist and tender. Your videos have inspired me to start preserving my own food. I'm a city dweller - no place for my own garden. But because of you I have connected with my local farmers and buy bulk from them and preserve my own food. there-fore controlling the ingredients. Seriously, you and your lovely family have been a blessing! And we are so very grateful.

I have to share my cornish hen joke. A couple of years ago we were invited to a friend's house for Thanksgiving dinner. I obviously asked what I could bring, and she jokingly said "bring the turkey". So....I bought a cornish game hen, roasted it, and put it in my biggest roaster. When we got there, she said "I was just kidding, I HAVE the turkey"!! THEN, she opened the roaster and saw that little tiny "turkey" inside. We laughed so hard!

I was listening to this video while outside cleaning my garden beds and my flower beds. I have to say that Josh has identified an Oregon trait in your family and mine! I had to move away and come back to really see how bad my Oregon family and friends are about interrupting others. As I progressed in my career, and became a therapist, I learned to listen more than to speak. I learned that many people listen and search for a response to what is said, rather than simply listening. So, Josh, you nailed it! My grandmother lived on a farm in Sheridan Oregon. We traveled from Salem most Sundays and all holidays to celebrate with my huge Catholic family! Grandma made everything from scratch. Even the whipped cream. I definitely was influenced to cook and bake when I watched her. Love this video! Happy Friendsgiving! ❤

Loved that you showed us making the pie crust from start to finish in real time. So many demos show the mixing and then tell you to work with it until it comes together. Tehn cut to the finished product. When you haven't a clue what you are doing, you feel as though there is no way that pile of crumbs will ever become a nice cohesive lump of pie crust. I’ve roasted over 50 turkeys in my time and I always rub my stuffed turkey with mayonnaise. I cover loosely with foil until the last hour so it can brown. I have never had a dry turkey. The mayo seems to stay adhered to the turkey better than butter and doesn’t taste like mayonnaise and browns beautifully. I will definitely try spatchcocking. Love your channel Becky.
My daughter spatchcocks our turkey. We do a bigger bird. They are a bit hard. We have learned to use a heavy duty garden shears like you use in the garden. We keep one especially for this. It is tough to break the back. She puts a clean towel on the floor then the cutting board with the turkey and another towel on top and she steps on it. So much easier. She usually brines it first then spatchcock. Bringing is so moist. We do our bird in a cooler to. They have brining bags that we use then put ice around through the night too. It cooks so much faster.
When talking about Mexican homesteaders it made me think of our family’s Thanksgiving tradition. All leftover turkey is deboned and combined with the leftover turkey gravy. The day after Thanksgiving my mom would break up the turkey into small pieces and return it with the gravy and reheat it. We kids were responsible for chopping onions and grating copious amounts of cheese. Mom was also in charge of making enchilada sauce. You can probably see where I’m going - we would have turkey enchiladas the day after each Thanksgiving. My dad, mom and siblings really looked forward to the day after Thanksgiving!
For the person hosting Thanksgiving for the first time: a friend’s engineer daughter made a spread sheet before hand. It actually reminded me of your mom’s working backwards list for cooking times so everything is done at the same time. Your videos of how your mom preps for huge dinners are great and if I remember correctly, you have an ebook or pdf on her method for big dinner parties.
On the Seasonal Homestead the way they shelled there black beans was to put them in a pillowcase and slap it on the ground several times not to hard. They said it worked great.
Watching you instead of the election and (as I tossed the dry-brine spatchcocking idea in the comments last week), I hope you love it as much as I do. It will cook faster than you think….check it at an hour-thirty. With larger turkeys. We do use carving knives and doing in a sink does help. Have fun!

The liver, gizzard and heart too give the broth good flavor along with onions celery and carrots to make stock for gravy and your dogs would love the liver and gizzards and heart. Growing up my Mom always crumbled up the liver into the stuffing and gives great flavor along with onions, celery and carrots. I continued that when I cooked on my own. Lots of gravy is definitely needed!😊❤

Yes you can make buttermilk the way Becky said or you can churn butter and the liquid leftover is buttermilk. If you make your own by churning whole milk you'll want to use the buttermilk pretty quick. Store bought buttermilk has thicker and preserves to make it thicker and lasts longer. Yes spatchcocking does make it cook evenly in the oven and also faster.
Turkey leftovers, recreated, is my favorite part of a big turkey dinners! I love finding new things to make! My favorite so far, is stuffing dumplings in turkey soup and bbq turkey pizza!!
I processed 5 turkeys last year and did 14lbs my own ground turkey. I spatchcocked the one we ate on Thanksgiving. It was around 29lbs. I used a sharp big knofe to cut the backbone out and bent the turkey backwards until everything cracked. It roasted so evenly, plus all of the skin was crispy! It's worth a try at least once. We'll be doing our main turkey like this every holiday from now on!
Turkey pot pie with one top crust only. Crust made out of puffed pastry. Yum. Mom & l made it with the leftovers. Dad got a 28# Turkey that year! 🙏🏻📿✝️💗✨️💗✨️
I just fixed my dishwasher myself for about $20. I was very pleased. After taking it out I found the hose that had a hole in it and replaced it, I felt very handy lol. but having just spent 6k on tree removal from the hurricane I didn't want a repair bill too if I could do anything about it.

Love your channel, Becky! I’ve been using FMF for years and if my flour is ground fine enough, and my recipe is a bit super hydrated, it has worked fine for me. But I know different mills have a different coarse to fine range. And as you’ve said before, soft wheat is best for pastry items. Have a blessed Thanksgiving!
My father wet-brined a turkey, rinsed and spatchcocked and rubbed down in butter. He grilled the bird and basted with Italian dressing. It is the best turkey I’ve ever eaten!
My and my in-law families are exactly like yours! It was my husband who brought it to my attention in our early dating days as well. He was not used to loud, boisterous, interrupting conversations. I'm the youngest and for sure couldn't get a word in without interrupting. His family doesn't do that. So when I was/am that way with his family, I started noticing the annoyed looks they gave me. We've been married 29 yrs, together a total of 33, and I'm still working on it ;) What has happened is that I tend to just watch the conversations and I tend to be quiet. Only speak up when it's important to me.

Dry brining is a technique that she used a lot in grilling and smoking. You put the salt on the meat and you leave it uncovered in the fridge overnight. Or even longer. It also helps to get a nice crispy skin.

You can 100% dry brine a whole turkey. I’ve done it now for about seven or eight years. Amazing flavor. I use salt and my favorite Thanksgiving herbs and all of that flavor gets drawn into the turkey
With the gravy if you are making it from scratch with flour, salt, pepper and stock it does freeze well but it needs to be blended after reheating because it separates. I use the pan juices and brown the flour to start the gravy. My family all like dark gravy the light stuff we call a white sauce.
Do you ever worry about poultry and the blood seeping into a wood cutting board? It seems that it would be hard to clean the board well enough since you can’t put wood into a dishwasher!

I like the leftover turkey dinner better than the thanksgiving dinner. Love the turkey soup and thanksgiving leftover casserole when you layer the turkey, cranberries, gravy and mash potatoes. So yummy ❤

Love watching your channel, for years we make what’s called a drunk turkey. I season the turkey then turn it breast down into the roaster and add about 4 bottles of turning leaf white wine. Not only will the house smell amazing the turkey is so moist. I baste it every 30 minutes . The gravy comes out amazing as well. We serve buffet so I’m not concerned about a pretty turkey it falls about but so delicious.

Fresh milled is a learning curve. I switched over completely from conventional flour and never going back. Weighing out the freshly milled flour is a must, because it measures different than store bought flour.
I have mixed leftover stuffing, mashed potatoes, small diced turkey and cooked the mixture in a waffle iron. Pour a little gravy and some cranberry sauce. It’s really good.

I just fixed my dishwasher myself for about $20. I was very pleased. After taking it out I found the hose that had a hole in it and replaced it, I felt very handy lol. but having just spent 6k on tree removal from the hurricane I didn't want a repair bill too if I could do anything about it.
I haven’t made a pie in years, but I signed up for pies for my mom’s Thanksgiving feast and so I’m so glad I found this while it was live!!! Becky, you are an inspiration to so many of us and we are grateful. Mary in northern MI.

Love your channel, Becky! I’ve been using FMF for years and if my flour is ground fine enough, and my recipe is a bit super hydrated, it has worked fine for me. But I know different mills have a different coarse to fine range. And as you’ve said before, soft wheat is best for pastry items. Have a blessed Thanksgiving!

My father wet-brined a turkey, rinsed and spatchcocked and rubbed down in butter. He grilled the bird and basted with Italian dressing. It is the best turkey I’ve ever eaten!

My and my in-law families are exactly like yours! It was my husband who brought it to my attention in our early dating days as well. He was not used to loud, boisterous, interrupting conversations. I'm the youngest and for sure couldn't get a word in without interrupting. His family doesn't do that. So when I was/am that way with his family, I started noticing the annoyed looks they gave me. We've been married 29 yrs, together a total of 33, and I'm still working on it ;) What has happened is that I tend to just watch the conversations and I tend to be quiet. Only speak up when it's important to me.

Dry brining is a technique that she used a lot in grilling and smoking. You put the salt on the meat and you leave it uncovered in the fridge overnight. Or even longer. It also helps to get a nice crispy skin.

You can 100% dry brine a whole turkey. I’ve done it now for about seven or eight years. Amazing flavor. I use salt and my favorite Thanksgiving herbs and all of that flavor gets drawn into the turkey
With the gravy if you are making it from scratch with flour, salt, pepper and stock it does freeze well but it needs to be blended after reheating because it separates. I use the pan juices and brown the flour to start the gravy. My family all like dark gravy the light stuff we call a white sauce.
Do you ever worry about poultry and the blood seeping into a wood cutting board? It seems that it would be hard to clean the board well enough since you can’t put wood into a dishwasher!

I like the leftover turkey dinner better than the thanksgiving dinner. Love the turkey soup and thanksgiving leftover casserole when you layer the turkey, cranberries, gravy and mash potatoes. So yummy ❤

Love watching your channel, for years we make what’s called a drunk turkey. I season the turkey then turn it breast down into the roaster and add about 4 bottles of turning leaf white wine. Not only will the house smell amazing the turkey is so moist. I baste it every 30 minutes . The gravy comes out amazing as well. We serve buffet so I’m not concerned about a pretty turkey it falls about but so delicious.

Fresh milled is a learning curve. I switched over completely from conventional flour and never going back.
Weighing out the freshly milled flour is a must, because it measures different than store bought flour.
I have mixed leftover stuffing, mashed potatoes, small diced turkey and cooked the mixture in a waffle iron. Pour a little gravy and some cranberry sauce. It’s really good.
I’m from England we cook our turkey in the oven on Christmas day we don’t have a thanksgiving I love watching you Becky if I’ve spelt your name wrong I apologise ❤
I have a huge family and we are so loud too, but we don’t even notice it when we are all together. At Thanksgiving there is around 48 of us.
Use a pillowcase it works great for shelling beans you grew.
