My mama used to make something very much like this for our family Christmas Eve dinner every year. She’s been gone for 10 years now and I tried and to make it but it just never turned out like hers so I gave up but I’ve been searching for a recipe since. I made this today and we all agreed that it’s the one we will use this Christmas Eve! Thanx so much for this!! I love it!!!

I watched this video last night and committed I was going to make today. I made it and just finished. It is sooooooo good my family just loved it. My 92 year old mother liked it so well she invited one of her senior friends to eat some. I would say that’s a HIT. Thank you

I used to make this casserole when my son was a child. I never thought about adding corn to it. I am going to try your version. I bet adding a drained and rinsed can of black beans might be good too.
Made this last night...SO easy !! My guys LOVED it !! I love your recipes because 9 times out of 10, I can see your recipe in the morning and have it on the table that night , just by pulling ingredients out of the freezer/pantry. Simple, delicious, with ingredients I can pronoun !!

Catherine I made this tonight for dinner and it was delicious. Thank you so much. I used a rotisserie chicken and one can of the chilies. It was plenty spicy. I put some crumbled pepper Jack cheese on top too. My wife loved it! Thank you again. You have so many great recipes. 😊

Hello I've never made Doritos casserole with chicken but I will b making this recipe looks amazing!!
I actually have a recipe very similar to this. It came from hidden valley dressing and featured ranch dressing of course. I use cool ranch doritos in mine. This is so good and I never thought of cooking the chicken breasts up like you did. I am definitely going to try it your way. Looks amazing as everything you make does.🙂

My friend did that with a Lean Cuisine recipe once and she told me how helpful they were. Keep us posted! I may like it myself. 😊

Green Giant makes a mexicorn with green and red peppers. That would be good to use in this casserole ! Ithink mixing salsa in the layers would be delicious !
Back in the 80's we called this Mexican chicken and it was a staple at potlucks. I made it once or twice myself.

A while back I had made the filling for an Enchilada Casserole and when I went to the fridge for the tortillas I realized we had forgotten to buy them ….. in a pinch I grabbed a bag of Tortilla Chips and layered them between the meat …… it turned out delicious !
We have a casserole similar to this with hamburger meat, but this looks like such a yummy variation! Will definitely be trying it! Thanks again, Catherine!😊

I would have to add black olives to the top. I love olives.
I use a very similar recipe that uses rotisserie chicken, no corn , but everything is still the same as you use.. it’s so good..

I've been making something much like this. Found it on Campbell's site. That recipe calls to use Velveeta as the cheese. I use Mexi Velveeta instead and use 1 can of crm chicken soup and 1 can Hatch green chili sauce. I also put onion throughout.
Hello again Catherine! I made this for dinner tonight. Yep, it was so good. it made so much for two people but we will have no problem sharing it with my husbands co-workers for lunch tomorrow, Their wives don't cook. Also, the mexican bubble up is becoming a staple in our house.

This recipe looks extra good ! How would this be ,if you added a can of refried beans to it. Then use it as a dip for crackers,celery or even carrot strips ?

The oven is a great option for me. I have back problems and I can’t stand to sauté or stir so I have to modify how I cook. I can sit to chop, mix and stir but I use the oven, microwave and Instant pot to do all the preliminary cooking. I did use the stove top to prepare the chicken gravy from your chicken and mashed potato casserole. I have 1 chair that allows me to sit high enough to stir the gravy. I served it with a loin roast on Christmas Day.

Can even shred lettuce and top off with the cheese and meat mixture you have a salad
Try it along with chili spice beans cheese drain corn tomatoes and green chilies beef then add Fritos to a bowl a bowl or use the chips on top and you have a taco dip, soup
