Janet, just made this Thanksgiving morning. Turned out great! It's in a jar in the frig, hope it reheats well. We're go to family later that cooks turkey, but 1/2 of us are vegetarian, and 1 is dairy-free due to Crohn's.
I don't think it's certified gluten-free, but it doesn't have any wheat products in it. My guess is that it might be made in a non-gluten-free facility 🤷🏻♀️
I think the question could be: Is Myokos budget friendly? A: No. No it's not budget friendly. I bought their (Myokos) European Style butter, it's twelve bucks a pound. Cough. Cough.

Could you sub the potato starch for brown rice flour as the thickener?
Yes, I think that would work however the texture may be a little different
