Yes appreciate the sound of silence. I watch another couple, and they’re really nice and fun to watch, however, I can hardly take the music, not my kind of music and way too loud. It hasn’t steered me away from them, but I sure appreciate very soft music or none at all! Thanks Becky for all that you teach us. So enjoyable, and I’m almost 73 and I’m still learning and to boot from a very young cook which delights me to no end, lol. Take care.

I am a married working mamma and I've always wanted to make food from scratch for my family, but I never thought that I had the ability or the time. This weekend I made bread, pasta, and chicken & dumpling soup all from scratch. My husband loved every bit of what I made and I almost burst into tears as he told me how good everything taste. Your videos are so empowering and easy to follow. We currently live on about 2 acres and I'm so inspired to start a garden and to start canning and bulk cooking. One of my favorite ways to preserve green beans is by salting. To make, I layer Frenched/split Green beans in salt. A plastic ice cream container works great. I tuck it into the back of the fridge and take out a bit at a time as I need them. They keep at least 3 to 4 months that way and I prefer them to canned or frozen green beans. To use them, you rinse off the excess salt and soak in water to 30 minutes. When added to soups, stews & casseroles, they season the broth beautifully!
I enjoy watching your show so much. I'm disabled and I can't do what I love anymore. You give me all day in the kitchen with new ideas and great dinners. Gardening and preserving are just icing on the cake. Thank you so much. God Bless ❤

Hi Becky! Not sure if you'll see this comment but I hope you do. My mother made strawberry freezer jam my whole life. A quick tip for you, you don't have to thaw out the freezer jam in the fridge to use it. If you like the fresh taste of the freezer jam, you can just leave it in the freezer. It's completely spreadable even when it's frozen. Just take it out when you need to use it and put it back in the freezer when you're done, it'll last forever and you'll always have that fresh strawberry taste. I love watching your videos. Thanks so much for renewing my joy of cooking!😊

I planted some things this year, but I am waiting them to produce. I planted corn, tomatoes, cucumbers, sweet peppers, and jalapeno peppers. The cucumbers have produced flowers and am waiting for the fruit to produce. Everything else hasn't produced anything yet, but I will have to be patient. Mother Nature works on her own schedule.
I made basil salt with my own homegrown basil. Fabulous, easy and oh so flavorful. Never thought of this! So fragrant and green. I'll never go back to the store bought dried stuff!
My former mother in law used to make garlic puree which was mixed with a little salt and perhaps some cooking oil or fat which she kept in small jars in the freezer, and thus rarely had to scrub garlic scent off her hands or chopping board - other than the day which she prepared the frozen puree.
Becky keep a running tally on all the canning freezing and preserving you do. It will probably blow us out of the water as to how much product to take care of.
You are an inspiration to me. One thing I notested if you had your berry bowl beside your berries and the bowl your putting your stem cuts in are the far right side you don't have to transfer your berry from left hand to right hand every time.
You can also make cilantro pucks and freeze them! Use a little water and lemon juice. You can either blend completely or chop etc. pour into ice cube trays and store in freezer bag.

My mother in law lives in Washington now, but when I was 19/20 she moved out there and I would visit her allllllll the time. I live in Colorado. And I have the fondest memories of just me visiting her and walking along the Oregon coast, talking for hours sitting on the beach. It was so fun. Love the coast!

Hey sweet Becky! I am watching as I am making homemade yoghurt and thought I would pipe in regarding salted herbs... I am french Canadian from Québec and salted herbs are very much part of our culture... It was how garden herbs were preserved over winter. Here's my recipe: 2/3 mix of anything that grows in the garden; think carrot tops, beet tops and all herbs ready to harvest making sure there are onion tops or chives, plus one carrot (very finely chopped) mixed with 1/3 part big kosher salt. I make sure my herbs are very dry, all chopped n food processor. I mix in the big salt by hand. Store in the fridge for a week or 2 before using. It will last forever in the fridge! I use it when boiling pasta, rice and/or vegetables. I also use it in soups ( french Canadian pea soup!!) and stews measured as regular salt. So versatile! I've been making my own for a long time as store bought small jars of salted herbs are very expensive here. I love seeing home cooks make their own versions! Hugs ❤😊
So you dry your herbs and veggies first, THEN run through the processor and add to the salt? Thats how I was envisioning it being done and was very surprised when she added the salt to wet, processed herbs. I'm wondering if adding the wet herbs to the salt and then drying infuses the salt itself with the flavor rather than being a mix of flavors, one of which is salt? I can see benefits of both.

You can make green chutney with your coriander!! We Indians love our green chutney’s with our sandwiches and many more dishes! Very easy to make Take your coriander, some green chillies ( don’t miss out, just add according to your preference) salt and cumin seeds or powder in a blender (food processor) and blend it! After you add a little lemon juice for that zest 😊 There is always this chutney in my fridge ❤️
Sugar snaps are the first thing I plant, I love them, they grow so high and are so prolific. So much reward for getting out in the cold to plant. we have had snow in Spokane after planting them and they come up through the snow. Shelled a bushel of peas every year on Grandmother's screened front porch in North Carolina. My favorite chore. Every summer.
I had a friend whose extended family lived on farms (our families lived in town) in Indiana. We used to love to go out to visit on weekends and help shell peas, snap beans, etc so they could can them. We always took some home (plus some other produce) to our mothers to cook for dinner!

I have Earth Boxes for my herbs, and my parsley and basil are going nuts! I live in Redmond, Oregon, and it’s been very warm. I keep all my plants well watered, and they love it! I don’t have a freeze dryer, so I need ideas for preserving my herbs. I love the Oregon coast! My grandmother lived in Estacada, and I grew up in Eastern Oregon, so we often went to the coast in the summer when we went to visit her. We’re now planning a September trip to Seaside. My kids are grown and gone, so it’s just the two of us now. The last few times we went to Lincoln City, so we’re changing it up a bit. I would so love to have a big garden again now that I’m retired. I have three Earth Boxes and intend to add several more next year! I got Oregon strawberries from my local produce stand and put two batches of freezer jam in the freezer. Nothing like a fresh Oregon strawberry! Marionberries are arriving, so that’s next on my preserving list! I love your videos!
Love this! My mother and I have a little side hustle making herb finishing salts, dried herb blends and infused sugars. We’ve made all kinds of crazy combinations. Most are good, some are amazing and others are interesting…. Try a rosemary with lemon zest and a squeeze of fresh lemon juice. It is fabulous on chicken, asparagus, potatoes, etc. When you’re lavender blooms add it to sugar. Use it to sweeten teas, sprinkle on muffins before baking or over vanilla ice cream. So lovely! Your adventurous spirit in the garden and kitchen is inspiring and entertaining! Thank you!
I want to make cilantro salt so much! I had a huge pot of it growing…..then the groundhog ate it down to the dirt! It started coming back and was doing ok but the heat killed it. I’ll be planting more the end of July or early August….I need my cilantro! Even the basil isn’t happy! Love your videos! I’d give anything to have your energy!!❤❤❤

I don’t know who (I call them south Texas due to their identified location) on this channel last year suggested Carribe Cilantro for growing in the heat but thanks to them! The seeds germinated in 90+F heat here in the south.

You can steep those strawberry tops in white vinegar to make a lovely infused vinegar for salads and marinades. Delish!

We got a deep freezer when I was a kid. Mum started making freezer jam (strawberry and peach). Loved it so much more than the cooked jam.

You can make green chutney with your coriander!! We Indians love our green chutney’s with our sandwiches and many more dishes!
Very easy to make
Take your coriander, some green chillies ( don’t miss out, just add according to your preference) salt and cumin seeds or powder in a blender (food processor) and blend it! After you add a little lemon juice for that zest 😊
There is always this chutney in my fridge ❤️

Sugar snaps are the first thing I plant, I love them, they grow so high and are so prolific. So much reward for getting out in the cold to plant. we have had snow in Spokane after planting them and they come up through the snow.
Shelled a bushel of peas every year on Grandmother's screened front porch in North Carolina. My favorite chore. Every summer.
I had a friend whose extended family lived on farms (our families lived in town) in Indiana. We used to love to go out to visit on weekends and help shell peas, snap beans, etc so they could can them. We always took some home (plus some other produce) to our mothers to cook for dinner!

I give my strawberry hulls to my chickens as well. The ducks love them even more than the chickens!

I have Earth Boxes for my herbs, and my parsley and basil are going nuts! I live in Redmond, Oregon, and it’s been very warm. I keep all my plants well watered, and they love it! I don’t have a freeze dryer, so I need ideas for preserving my herbs.
I love the Oregon coast! My grandmother lived in Estacada, and I grew up in Eastern Oregon, so we often went to the coast in the summer when we went to visit her. We’re now planning a September trip to Seaside. My kids are grown and gone, so it’s just the two of us now. The last few times we went to Lincoln City, so we’re changing it up a bit.
I would so love to have a big garden again now that I’m retired. I have three Earth Boxes and intend to add several more next year! I got Oregon strawberries from my local produce stand and put two batches of freezer jam in the freezer. Nothing like a fresh Oregon strawberry! Marionberries are arriving, so that’s next on my preserving list! I love your videos!

My mother and I have a little side hustle making herb finishing salts, dried herb blends and infused sugars. We’ve made all kinds of crazy combinations. Most are good, some are amazing and others are interesting…. Try a rosemary with lemon zest and a squeeze of fresh lemon juice. It is fabulous on chicken, asparagus, potatoes, etc.
When you’re lavender blooms add it to sugar. Use it to sweeten teas, sprinkle on muffins before baking or over vanilla ice cream. So lovely!

I want to make cilantro salt so much! I had a huge pot of it growing…..then the groundhog ate it down to the dirt! It started coming back and was doing ok but the heat killed it. I’ll be planting more the end of July or early August….I need my cilantro! Even the basil isn’t happy! Love your videos! I’d give anything to have your energy!!❤❤❤

I don’t know who (I call them south Texas due to their identified location) on this channel last year suggested Carribe Cilantro for growing in the heat but thanks to them! The seeds germinated in 90+F heat here in the south.
