I’ve talked to many bartenders, and several have told me that it’s all about the wait. Most stouts and porters are supposed to be drank at a temperature closer to room temp. The shape of the glass slows down the process of settling in order to help the delicious elixir reach it’s ideal temp.

'marketing' has nothing to do with it. As a beer brewer, I've seen that there are marked taste and aroma differences with good quality beers and stouts when served in the right glass. Good beers are wasted if drunk from the bottle or standard pub glass - designed for safety and longevity. Guinness works fine in the conical glass and needs settling time. It does taste even better in a stout specific glass or a large tulip/wine shape, and this can overcome much of the "Guinness doesn't travel" argument. Try it in a pub. It'll start a conversation if nothing else...

So, you order your next pint before you have finished the current one, that is how we do it here in Ireland. Timing, takes a bit of practice but once you got it, it works. Also pubs in Ireland pre-pour Guinness pints in anticipation of people ordering them, so you normally see a rake of pints resting on the counter waiting for top up.

What they don't take into account is the head. You need to pour it tilted to avoid any bubbles from forming at the top. Pour it too steep and they form immediately at the surface, too tilted and they splash onto the head. I find the perfect Guinness is poured just at the tip of the rising stout, adjust it by gradually lowering and tilting the glass according to the rise. By doing so you still have to wait to settle it, but the Guinness will darken much faster and prettier than any other way. Plus your head will be paper white and smooth as a baby's bottom!

Most pubs serve stouts too cold anyway. A stout should be served around 55 degrees, but due to refrigeration limits most places serve the stout at the same temperature that they server all their other beers. Any extra amount of time I have to wait for a stout to "settle" is perfectly fine because I have to wait for it to warm up as well.

There's so much more to enjoy from a properly poured pint in the right style of glass (not necessarily Guinness-branded). The head didn't look very present in the martini glass, and aside from not providing the fluffiness everybody wants atop a pint of any beer, it would probably make it too heavy-bodied. And I get bloated easily. Long story short, I'd like my drink quickly, but not if that would affect its quality as much as this suggestion seemingly would. Plenty of beer traditions are silly and unnecessary, but lots have very good reasons behind them. Also, I thought the variation in density was due to Draught being 75% nitrogenated and 25% carbonated...?

I think they "buried the lead". Making you wait is marketing. 1) You appreciate the delayed gratification more than the instant gratification. 2) When you order a Guinness there is this "exclusive six step branded process" that they have to go through which obviously means it is a better beer. because of the exclusivity etc. It takes longer because it helps them sell more beer!!!
This is not a comment about the beer. It is a comment about the marketing, I love that marketing because if nothing else it made Guinness be one of the few stouts readily available in the US before the craft beer boom.
Now, I am going to go test the affect that various shapes of glasses have on Guinness beer.
    You know, for science.

I worked in a bar that had funny lights on the bar and you would see the Guinness effect in other beers cause of said lights. Its the perfect pint of Times Square rooftop bar.Think it was 46th street and bway. Not sure it cause of the gas mix but all the beers used to settle just like Guinness but at different speeds.

    So where's the second pour?
That 'tulip' glass you're using isn't what seasoned Guinness drinkers want their pint in. The real glass is wider and a little shorter too

This so so goofy. You can't say "you're pouring your Guinness wrong" because the traditional way requires waiting a minute and a half before drinking it. What, am I ordering my margaritas wrong because I have them blend the ingredients instead of pouring them straight in my mouth?
    It's drinking, not speed running.

Enjoy your beer in any glass you choose. Ever tried drinking beer from a Bordeaux style glass? This way you can swirl it around like you do with wine to release more aroma. Works very well with highly hopped beers such as IPA. This method is surely wasted on American swill.

Is this a troll? The foam has to cease/settle so that it is more firm. You have to wait anyway.
In Czech, Ukrainian, Polish and German pubs it is done with all the kinds of beer as long as the pub is not too busy, also larger head is appreciated (UK lagers will be served with 0.5cm, in Germany 2 to 3cm, Czech have different height for every beer and special serving methods).

The two part pour is bullshit. It’s a hangover from the 40s and 50s when draught Guinness was poured flat from a “low” barrel and then topped of from a “high” barrel which was cask conditioned and therefore full of carbon dioxide. It was too fizzy on its own. When Lagers were introduced on carbon dioxide gas, Guinness found it too was too bubbly so divided a carbon dioxide/nitrogen mix. Bar staff kept doing the two part pour despite it being unnecessary. People believed this was how it should be done and Guinness have turned it into a marketing tool. The settling is a result of the nitrogen.
This came about around the early 60s.
Traditional Guinness was actually sold in bottles. And the best stuff still is.

  • @geneva760
    @geneva760 3 ปีที่แล้ว +1

HA - the "...straw..." came to my mind even before it was mentioned it - HA. I have seen a pub here that after the pint of Guinness was poured, they then put the glass on some sort of machine that 'mico-vibrates' and gets all the bubbles and head up to the top very quickly. HA - a mate put his pint of lager on it and the machine sent all the CO2 out in a 'flash - HA - his pint was a flat pint in no time at all. Have a safe and nice day all. CHEERS from AUSTRALIA.

This video is well made and I don't doubt the Professor's expertise (thoughh I think it's a combo of carbonation and nitrogenation)...but the thesis is that the whole metric is just...how fast it settles? I think most Guinness drinkers would disagree! It's almost like "Tech Insider"s "content" is just a marketing company. Aka clickbait. Suddenly defensive?

In most pubs around the country the tulip glass didn’t take off. Perhaps in Dublin it did, but mostly tourist pubs. For those who’ve been drinking Guinness all their lives, the tulip glass just doesn’t feel right. Standard pint glasses are what you’ll be served Guinness in all over the country, to say the bubbles act differently in them asses is wrong.

it isn't marketing. it is tradition. a desire. make your order. have a chat with the bar staff and present company, or inspect the memorabilia on the walls. have patience. watch the pint settle. try and figure out which is your pint glass of the row to be topped off. spy if anyone is trying to knobble a barman to get their pint skipping you... have your first slug at the bar before navigating back to your spot. it is a welcome ritual, and a chance to meet other people.

You call the pub a few minutes before you get there to organise the pouring of the first one so its perfect for when you arrive,...About half way through drinking the first one order the second one so that will be ready at the same time the first is finished,..And continue this process until your legs dont work anymore.
