Mentioned it here before, but my super short 4'10" wife has a custom fitted, custom built steel gravel bike from Rodriguez Cycles. Velospec steel, handbuilt wheels, 1x, dropper post, velo orange front and rear racks, super light, it's the nicest bike I've ever seen.

I have 2 custom bikes. A carbon and Ti. In 60 years of cycling, I never knew the joy/pleasure of having a bike fit my geometry. I decided to get another custom steel next year. Probably won’t get another until a way to take your stuff with you becomes available.
I’m lucky enough that my “bike fit” works on most standard 56cm frames. The only thing that a custom built frame would get me is a custom tube set for my weight/riding style. My list of dream builders goes something like this, in no particular order. Richard Sachs Dario Pegoretti Tom Ritchey Vanilla/Speedwagen Independent Fabrication
I ride a Coconino (650B mtb) made by Steve Garro in Flagstaff, AZ. The fork is custom as well, made by Vulture, a.k.a. Wade Beauchamp in Bend, OR. I've had this bike since 2013 and I still give a "Yeehaw" every time I ride it. The best thing about both builders is I have known them since 90s and did epic rides together so both knew my passion and riding style. The hardest decision was color. I still hadn't made a decision when the bike was nearly ready to go to paint. Finally Steve pointed to a bike belonging to his wife and said, "That's a nice color." So that's the color we went with Signal Orange with a gold flake overlay. Yeehaw!
My dream custom bike is Rychtarski, it's a Polish bike manufacturer. Maybe one day. Also, always drooled over Landsharks and Rock Lobsters, but US manufacturers are more expensive of course.
The two I keep jumping between are a gravel bike from Naked Bicycles on Quadra Island in BC Canada, and a steel touring bike from Mariposa Bicycles in Tornonto Ontario. Living on the West Coast I'm 100% sure that I'd get more use out of the gravel bike, but goddamn the Mariposa bikes are something to look at and I just want one.
I'm a couple of weeks away from a custom Naked gravel bike, working with Sam was both insightful and inspiring. He's a true craftsman. Going to Quadra Island for the bike fit was an added bonus, looking forward to going back for the first back-road test ride!

If I could afford it, Framework Bicycle in Hamilton Ontario. Realistically I can't justify it so an off-the shelf bike is what I'll end up in my current search for a gravel bike to add to my Optic.

I’ve been riding for a long time and some nice bikes. Did a custom at one point. Think I did it right, and it was a beautiful bike, but to be honest I wasn’t wowed. Call me a commoner but my two favorite bikes have been a Trek Madone and a Checkpoint. Don’t get me wrong those are sweet bikes you’ve got. Maybe I’ll try it again one day. Too many great bikes out there!
Benn lucky in my younger days I have two custom built bicycles built to size by the same builder Stan Johnson. both Campagnolo full groupo Steel is real.
skip all these steps and just give Marino the geometry of the bike you've most lusted over, regardless of if you've ridden it, and then just change the HT angle to 57 degrees for good measure.

Dont forgot to make sure you add bottle cage mounts, or get steel so you add your own.
Some bike fit systems will allow you to select multiple bike mfg/models as frame geometry differences will impact fit measurements

Actually, almost every custom bike is less than your specialized s works and you don’t have to be locked into a groupset

Of course, getting a good bike fit is pretty much a challenge, too.
Especially when three bike fitters will give you three different fits.
