6 QTS WATER
2 CHICKEN BREAST QUARTERS SKIN ON
2 MEDIUM WHITE ONIONS (WEDGED)
1 HEAD CABBAGE (WEDGED)
BUNCH CILANTRO
4-6 VINE RIPENED TOMATOES (HALVED)
8-10 KAFFIR LIME LEAVES (ROUGHLY TORN)
2 BUNDLES LEMONGRASS STALKS (PEEL OUTER LAYER, CUT OFF ENDS AND TIPS, BRUISE THEN CHOP INTO 3 INCH PIECES)
1/2 CUP FRESH GALANGAL ROOT (THINLY SLICED)
2 CANS STRAW MUSHROOMS (RINSED)
4 CUPS BUTTON MUSHROOMS (HALVED)
2-3 LIMES (HALVED)

Thank you very much. It’s mouthwatering. I can’t find fresh galangal (alpinia galanga) but I found dried powder of galgant (alpinia officinarum), which is slightly different. Do you know it? Can I use that instead of fresh galangal? By the way, I love the back ground music. What is it? Thanks
