    I think I would really like all of them. The watermelon one really intrigues me. I've never even heard of watermelon berries til one of my Alaska families talked about it. So I would really like to taste the watermelon berry and the jam.

    Those jellies were so pretty, especially the fireweed jelly. I would love to taste them, especially with a homemade biscuit and butter. Yummy.

    When canning with water bath your water needs to be about a half inch over the top of the jars and it needs to be at a full boil . The boiling water will allow air to escape from jars. To get the air out is important to keep any bacteria from getting in and no mold will form on top

    Enjoy watching you make various jams and jelly Ronan is beautiful and has a lot to say will you guys be doing any hunting and putting up meat ?that would be interesting and certainly a way to acquire some protein.

    You need a taller pan like a 5 to8 qt to make larger batch of jam at a time like a spaghetti pan. It can double as an extra water bath kettle too for canning. I wonder what the flavor is like for the fireweed jel. Awesome encouragement from baby. I forgot that it is a little harder to get jam to set with low sugar pectin. I usually refrigerate a sample to make sure for 15 minutes.

    If you don't know already, using Pomona Pectin will save you alot of money on your sugar that you use in your jams and jellies generally for most flavors you use 2 cups of sugar to 4 cups of fruit or juice. It will show you how to make jams and jellies with honey also. I use white or apple cider vinegar rather than lemon juice and I think you can taste the fruit flavor better. Thought you might appreciate the savings.

    You can make a combination of all the berries for a mixed berry jam or jelly with the left over small amounts of the berries you have. ❤great vlog

    There is reduced sugar pectin powder but I've never seen it for sale in bulk. But I like to make jam that you can taste the fruit!! Looks great. You obviously have alot of canning experience that you brought so much canning. Good skills to have.

    Wow, congratulations on getting the jams and jellies going. I feel like reducing sugar too much could mess with recipe and the way it sets up. Excellent job. That little munchkin has a lot to say. It’s amazing what you accomplished. Excellent berry picker help is awesome too.

    Elderberry jelly is good. Can also use the berry to make a cough syrup. Will calm a cough.

    It works a lot better if you measure your sugar out in another container when you add it to the pectined berries

    On the Elderberries, please double check they are not the copy cat Elderberries that are poison. I have only had Elderberries from lower 48 and they are much darker when ripe, these could be a red elderberry. I pray your garden is doing well. Thank you for sharing.     Elderberries aren't ripe until they are a deep purple or black color. I googled it to make sure it's same in Alaska is the same as here in Alabama. I love your videos and seeing that beautiful baby girl. I always wanted to move to Alaska and live that dream life of being off grid and homesteading but i don't think i could handle the cold anymore plus my kids aren't interested they are teens. I do homestead here growing my garden and raising turkeys,chickens,ducks and guineas.

    Rowan is “finding” her voice, which is always funny to me. Being a baby girl, I guess she’s getting her voice ready for all of squeals that little girls make! She’s growing so fast - holidays will be so much fun and have special memories!! Oh, the elderberries - they are mainly high in vitamin C and good to build up your immune system. During the winter, my daughter gives Elderberry Syrup to her children at a second sneeze to hopefully help with colds, etc they can pickup at Kindergarten or school. There are drops for infants, but I don’t know about the dosage. Wouldn’t hurt you adults either - makes good pies. Glad to see all of you are happy and well. Your Texas fan

    To stop the pectin from clumping.....I add it to a little bit of sugar with the pectin. Once incorporated, then add the remainder of the sugar. You did an awesome job. Fireweed jelly is one I want to try. First I'll have to order some seeds...lol.

    I used the red currents in place of cranberries for thanksgiving. It was so good . I think I’ll can it this yr.

    Think about using the jelly in a marinate. Salmon, halibut, beef. Experiment a little. You'll find some fun things to use the jelly on or in cooking.

    If you don’t get all the bugs, don’t worry. Some cultures consider bugs a great source of protein!

    Love the baby noise in the background. If you want to decrease the sugar, make sure you use a low sugar pectin.

    Rowan is so pretty and getting so big. Pimonas Pectin uses much less sugar in their recipes. You have to use the correct amount of sugar with Sure Gel. Wow, nice amount of jam and jelly for the winter.Hope you get more blueberries. Rowan wants a taste. You need a 5 or 6 quart Lodge dutch oven on your amazon list. great size and heavy.

    I make all kinds of jellies every year. I don't measure. I guess. I don't follow a recipe. They always turn out perfect. Your pans are just fine.
    This year I made dandelion jelly and honeysuckle honey. Different lol

      We’ve tried dandelion jelly in the past and it was similar to the fireweed jelly with its slight floral taste.

    Some berries do not require as much pectin. They naturally are thicker when prepared. May be why your currant jam was like paste somewhat

    Never heard of using flowers to make jelly. I bet it taste good my mom used fruits to make jellies or jam. Sweet potatoes makes a good Jelly.

    Jellies could be a cash crop at farmers market in the future, one that might at least bring you enough to pay for the canning supplies for your use.

    Thank you for sharing Rowan (Rowen.? ) with us. Pamona’s Pectin! Uses less sugar with great results. Next year, please revisit spruce tips - you all made it too complicated. Watch some AK vids; stir fry, easy syrup, tea, etc., great Vit C. So happy to see you using fireweed! Love the baby “talking”?!🤣 🥰🥰🥰

    If you put 2 Tbls of butter in the berries when you are cooking them, that will knock the foam down.

    When making and canning jam it's important to follow the recipe as exactly as possible. Don't skimp on the sugar, but make sure you have the right amount of berries/juice.. Alternately, use a low sugar recipe. That's my advice from years of experience. I think you did a great job and I'd love to taste them!

    Elderberries aren't ripe til they turn purple. But by that time the critters eat them up.

      There are 2 kinds of elder berry. Down south they are black. We only have red up here and it is not used as much.

    Awesome. Next year hopefully rhubarb jam too...hows it doing in the bucket.
    I made mint jelly with the wild mint i found. Great on meats.

      The rhubarb seems to be doing very well. We probably won’t be able to do anything with it next year but maybe the year after!

      Not sure we will be getting a well. The company has not gotten back to us all summer.
      We have plenty of wood from stocking up last fall that we will not have to gather any this year, but what we have will need moved into the woodshed once it is completed.

    In the one that is really thick I would put a lot less pectin because some berries have there on natural pectin in them just do more Research

      There are so many across our property. They are kind of troublesome and difficult to get rid of.
      These are not the same as the elder berries in the lower 48. They are far less useful, and the seeds are toxic.

      Watermelon jelly tasted very similar to watermelon jolly ranchers. I’m not sure how to describe the currants other than very sweet and maybe mild strawberry flavor - the berries alone are tart and sour. The fireweed jelly is sweet with a slight floral taste to it.

      Probably not until winter. We plan on doing a lot of interior work this winter.
      Late fall we will possibly be working on siding.
