If "pie hole" means "mouth" as it does in the saying "Shut your pie hole" ("Shut up"), I'd guess having the "arrogance of a pie hole" could mean she bragged about the game being easy before she truely knew what she was getting into.

Bae is trying to tackle it like Elden Ring, where your character gets much more powerful faster, and you can do aggressive run backs. DS1 is much closer to DeS and Fromsoft's old King's Field games where you need to tackle each challenge one at a time, because even just fighting multiple enemies is extremely dangerous early on.
