@Mr. Smokin and Grillin with AB, I just made your eggs benedict with a twist. I already knew how to poach eggs so the sauce is what I was after and it tasted great. I used my Mom's homemade bread with bacon and Carolina spicy sausage with the poached egg and then topped it off with that sauce. It was great!!!!! I had coffee and a mixed drink with it. Going and clean up now but had to take a minute to thank you for a great brunch. That sauce would go good over fries amongst other things. Peace and many gifts to you brother.

I live in Alaska and used to work construction, I boated out to a remote fish hatchery to do some electrical work for a few weeks in the summertime. I was in my mid 20's at the time and never had eggs benny before. The chef who made our meals out there usually went out of her way to make us all fine meals, one day she decided to make homemade bennys just like you did with everything but the chives, (it's really tough to get fresh food out there). It was the best breakfast I had ever had and to this day I make them often! This video brought back wonderful memories and wanted to say I appreciate all that you do and keep up the great work! 😎

Thanks for this. You make it look so easy to make the Hollandaise sauce. I've not seen Eggs Benedict as a sandwhich before. It's usually toasted muffin, meat, sauce and eaten with knife and fork. More like an open faced sandwich.

I like how you made the Benedict’s into a sandwich! I haven’t tried that. The eggs looked perfectly done and I usually shoot for that exact outcome when I do them. But I have pulled them out of the water too early and there was still runny whites. 2-3 min usually makes them perfect…depending on the heat level.
I enjoy eggs benedicts at restaurants, but hollandaise sauce at home always made me intimidated. Thanks for the sauce demo especially. I could eat this once or twice a year after my cholesterol tests. 😄 Adding chives a nice touch!

AB, the easiest way to separate eggs is with a slotted spoon. The whites will slide through the slots and yoke stay in spoon.
