A very short chicken biryani recipe:
1. **Marinate Chicken**: Mix chicken with yogurt, ginger-garlic paste, spices (turmeric, chili powder, garam masala), and salt. Let it sit for 30 minutes.
2. **Cook Rice**: Boil basmati rice with whole spices (bay leaf, cardamom, cinnamon) until 70% cooked. Drain and set aside.
3. **Fry Onions**: Fry sliced onions until golden brown. Remove half for garnishing.
4. **Layer Biryani**: In a pot, layer marinated chicken, fried onions, mint leaves, and partially cooked rice. Repeat layers.
5. **Dum Cooking**: Seal the pot with dough or foil. Cook on low heat for 30-40 minutes.
6. **Serve**: Garnish with fried onions and fresh coriander. Serve with raita.
