Hello ria I so enjoyed this meal preparation. Girl I love anything that makes staying in the kitchen long long a no no and most of what u did could be prepared before . The corn pie was different no cheese worth trying. Cassava lord that root crop I eating it any how you cook that so that pie is a must try. Can you suggest other cheese that might be able to go with the cassava to take it to the nxt level. I am thinking mini pies in the ramekins. Can't get the gremlins to eat cassava but they looking on that's promising. To you gods blessings and keep up the good work.
anjo ferguson Thanks so much. I was surprised my teens ate it without any complaints! There is hope. I used American yellow cheddar(because that’s what the hubbie bought for our pandemic prep) but ‘Trini’ white cheddar is untouchable. If I make it for Thanksgiving or a special occasion I will try Gruyere- my ultimate favorite - also used it in my scalloped potatoes recipe. I imagine a pepper jack cheese or white Vermont will also work. A little bit of mozzarella mixed in will make it super melty. Ok gotta go, I’m making myself hungry. Love to all. 😀💕🌷

Janice Agimudie Hi Janice. There is nothing that can compare to the unique and flavorful taste of Caribbean Pimento / seasoning peppers. You can use deseeded jalapeño or mini red peppers but I can assure you it won’t be the same-and not a good substitute in all recipes calling for pimento pepper. The recipes can certainly work without it if there is no other option. It’s a ‘really nice to have’ not ‘must have’. We make do if not available -but I make the trip to Liberty Queens every couple of months to stock up. They stay well in the freezer in a resealable bag.
