- The last video of 2022! We went out of Hillsboro inlet and caught some big baits known as speedo's aka firetail scad. These are the best baits for big pelagic fish, as they put out crazy vibrations and attract giants. You never know what is gonna eat your speedo, inclduing sailfish, kingfish, wahoo, mahi mahi and more.

We like to make bacon wrapped king medallions on the grill or smoked. Marinate the medallions 8-24hrs ( sriracha, soy, ginger, honey ). Thanks for sharing!

Fun video and for sure, Kingfish are great! I mostly grill, fry or make fish dip. Many of the old boys I used to take on over night trips out of PCB would curse us catching Kings all night, claiming they weren't fit for anything. That changed when I brought a 2 pound bowl of King dip and a big box of Ritz crackers. They made it disappear within 20 minutes. 😁

Lol, I’ve smoked King Fish, Mackerel and Steelhead. Smoking is the go to that makes a really oily fish taste amazing. You know your stuff my friend.

In thailand , we didnt slice as you did, we just chop it into cross sections, around 1.5-2 cm thick per each
And we just soak it with fish sauce about 0.5 or 1 hour, then fry 😅

YES!!!!!!!!!!!!! Someone who finally knows the best way to fillet a damn fish for a change. Start at the tail so that you can make as less cuts as possible.

Brine for fish is supposed to keep the fish from spoiling when it is being smoked. Just like pork and beef. It made it so many didn't have to eat everything right away ..it be stored and eaten later. Thank you for sharing your time and adventures

I'm from the UK, been fishing a couple years but what got me interested was watching the discovery Channel when I was little, Sail fish fishing... Didn't get into it then simply because I knew it was out of reach for a 12 year old English guy living next to the Bristol channel 😅 but now I'm curious, and recently most of all its from watching your videos that's making me want to come to florida and get on that lush blue water and take it all in and give some boat fishing a go. Not necessarily Sail fish, but going out on a charter! But I've no idea where to start or who to get in contact with for the best charters and accommodation. I'm scouring Google and hopefully next year I may have the courage to make it over solo ❤️🔥 keep up with the content man I live your vids. Tight Lines. 👍⭐️

Great video. I'm not sure if you're familiar with this or not but some years ago off of State road 84. There was a place called the Florida smokehouse. And you could take your fresh catch whether it was kingfish selfish whatever you had whatever you wanted to get smoked and they would do it for you and they were package it. Boy do I miss those days.
