🥜Aiskrim Kacang Merah🥜 | Creamy Red Bean Popsicle | #2 Cooking Diary | City Tracker

These red bean popsicles are creamy with chewy beans inside, moderately sweet, and very refreshing. It is a nostalgic treat that brings back in the early 90s era in Malaysia 🇲🇾 We love the creamy taste and its easy to find in store. You might find sweetening and freezing beans into an ice pop to be a weird idea. But if you grew up in Asia or you’ve tried these sweet bean treats while traveling, you know how delightful they are. The whole cooking process required some patience, but it was so simple. I just make the popsicle/ice cream in a small quantity, you can double up the ingredients to make more popsicle.
Ingredients:
300 grams of dried red beans (or fresh beans, must be soak)
200ml coconut milk (in cartons/fresh)
800ml water
1 cups sugar
1/2 sweetened creamer (any brand)
1 tablespoon of Tapioca starch
1 tablespoon of cornflour
2 teaspoon of rose coloring (can be replace with food coloring)
A pinch of salt
