Jab-Jab is a Patois transliteration of the French Diable-Diable (lit. "Devil-Devil"). It's a depiction of the Devil - or at least the popular notions of what the Devil looks like which isn't based on anything in the Bible. I'm not sure of the exact origins of it. But given that Carnival was celebrated by Catholic French planters during the time of slavery, it's possible that this was a type of masquerade depicting the Devil, maybe with red coloring. Then later the emancipated slaves adopted it and used black coloring and added their own elements and meaning to it and used it to poke fun at their former enslavers.
