It depends on the oven. Some can make the skin crispy. But this recipe is not meant to make crispy roasted chicken. I made "ga roti", not "ga nuong da gion" hihi

There is no substitute for five-spice powder, but you can make your own with 3 cinnamon sticks, 5 star anise, 1 1/2 teaspoons fennel seeds, 1 1/2 teaspoons whole cloves and 3/4 teaspoon black peppercorns. Grind in a coffee or spice grinder until finely ground.
You can turn many of my recipes into vegetarian by replacing meat with mushrooms or mock meat; and fish sauce with soy sauce. For example, skip the meat in banh bao (steamed bun); replace fish sauce with soy sauce in Dau phu sot ca chua (Tofu in tomato sauce), use mushroom fillings for banh xeo (Viet crepes) etc. But I will make a vid for my favourite vegan dish soon hihi
Yes, you can sear the chicken on both sides with a lillte oil and add in coconut soda/coconut juice/water and cook until the sauce evaporates. It tastes even better that way :P

In Vietnam, they don't traditionally use ovens, so how did they bake it back in the day?
They actually fried them. Nowasays, using the Air Fryer is an ideal idea 😊
