  • Nam yu, also known as nam yue 南乳豆腐, is a fermented bean curd (tofu) made from soybeans, red yeast rice, and Shaoxing wine. It has a pungent aroma, a savoury and umami flavour, and is high in protein and amino acids, which the human body need. If you've ever made char siu from scratch, you'll probably know this ingredient.
    Almost everyone, young and old, loves all types of crispy chicken wings.     Ingredients:
    Makes about 20 wings

    2kg chicken wings
    3 red fermented tofu
    2 tablespoons of red fermented tofu sauce
    1 tablespoon light soy sauce
    1 tablespoon oyster sauce
    1 tablespoon young ginger juice
    2 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)
    5 cloves of lightly smashed garlic
    2 teaspoons sugar
    A few dashes of white pepper
    2 tablespoons rice flour
    5 tablespoons corn flour

    I don't fry whole chicken wings because the drums takes longer to cook. The wings are already burnt but the drums are still raw inside.

      Lower the heat to cook the drum better. Than double fry for the crisp

      Hmmm. That’s not possible, unless you did it the wrong way. Something to do with the heat of your oil.
