Made this today with a few swaps due to availability. Vegan butter instead of coconut oil, and I actually pureed some peaches instead of using apple sauce. Used brown sugar for the entire recipe. Excellent. The batter I had was definitely more wet so I added about another half cup flour just to tighten the mixture but otherwise it was honestly perfect. Thanks to you both!

Hi there! Well, I tried this one! I thought I followed the recipe exact...but apparently not😂 I whisked my wet ingredients, added my dry ingredients and the wet ingredients overpowered the dry and it was not thick at all. It was jus a little thinner than a normal cake mix. But I continued on and I put half into my prepared loaf pan topped it and put the other half in and topped it, swirled and baked it for 45min, then another 5min until the toothpick was clean. It probably rose to three quarters of the size of yours. The house smelled wonderful! I took it out of the oven and let it sit for a few min then cut it to taste it. Though it was dense, to my delight, it tasted amazing! Now could you maybe troubleshoot what I could have done wrong, that I didn't get a thick consistency from the onset? Things I did that may have affected the outcome: •Used 2c oat flour •Warmed up the coconut oil for 15sec to liquefy it. [Maybe i should but it already liquefied.] •Used cold non dairy milk I would really love to make it again and get it right. I rarely if ever use all purpose flour. Any suggestions you can give will be greatly appreciated. Thank you for another great recipe!
Next time use gluten-free white bread flour due to the high protein content. Not the regular gluten-free flour. You can also add psyllium husk to give it to give it more extensibility.

Coconut flour needs much less flour and way more liquid. Unfortunately we don't have those ratios for this recipe at this time

We'll write the bran idea down. Muffin pan will just cook faster, so we'd check after maybe 25-30 mins. Toothpick test

We've done both and there's really not that much of a difference. We do have a tendency to place it on a cooling rack out of habit
Avoid white sugar if you can...in life...in general. Use brown unrefined sugar as much as possible.
