When I was a kid we often had pimento cheese and I really miss it. Mom would make toasted cheese sandwiches using a thin layer of the cheese, or sometimes open-face sandwiches with pimento cheese and a slice of tomato, all toasted under the oven's broiler. I recall the local stores would also sell sandwich slices of a harder pimento cheese. Though I really like pimento cheese, I'll probably make a cheddar based beer cheese spread to have with French bread toasts or large hard pretzels around Christmas.
We love pimento cheese. My recipe is very different from yours. We have been making ours for over 50ty years.. I am going to try yours.. We like ours stuffed in celery.. Thanjs

Thanks for the recipe. I haven't had pimento cheese since I was a kid in the 1960's when my friend's Mom would make it and put it on celery to give to the kids as a snack. I will make this for sure
Our elderly neighbor made me a grilled cheese with this spread once. I have loved it ever since! I often double the veg in it and it doesn’t affect it at all. Yum!
Love, love, love pimento cheese. I also find the little jars of pimentos quite expensive. I get red, yellow, and orange bell peppers and roast them. Then peel and finely shop them. I've never used sour cream and cream cheese, but I will now. This sounds better than mine.

I'd never heard of it until many years ago while working with a woman from Texas. Her version was much simpler (fewer ingredients) and only stirred. Her custom was to make a sandwich of just that spread on the best store bought white bread. It was really good but not the kind of thing you want in your fridge very often!
Oh my goodness I Love love love this stuff. Wish I had a food processor...I have to stir mine by hand which is incredibly difficult but oh so worth it. I out just a tiny bit of Worcester sauce in mine rather than hot sauce. I think. Maybe it goes in as well. Uh oh. Just realized it’s been too long since I made this! There is NEVER a time for salad dressing (Miracle Whip etc). Never.
I agree about the Miracle Whip--my in-laws use it all the time and I can't stand it. I'm a Duke's girl, made in South Carolina! It has been around over 100 years and is still the best as far as I'm concerned.
Jane Martin I’m a Hellman’s girl. I’ve tried Duke’s and just didn’t care for it. My mother used miracle whip when I was growing up and I hated it. My grandmother only used Hellman’s so when I visited it was wonderful to have real mayo. I don’t really dislike Duke’s, but it just didn’t seem right. However, I would use it over miracle whip in a heartbeat!
Noreen, do you remember the pimento spread (I think it was Kraft) that came in a glass jar? I think the other flavors were pineapple, and maybe smokey cheddar. It was a real treat back in the late 50's. I remember eating it on crackers when we watched Lawrence Welk on a Saturday night. What kind of mayo did you use ma'am im from the south and lobe pimento cheese but its so expensive where i live so i would rather make it myself lol.

I used whipped cream cheese !! Makes it allot easier by hand 😉
