Heres the biggiest tip i learnt from 245 attempts to finish.
This is literally a darksouls boss fight do not rush never ever attack him when you are in the corner. Prays and movement is the absolute most you need to concentrate on before you click attack. When i started playing super defensive i did it within 20 attempts noe ive done him 10 times !

I didn't use the tips in your video as I've developed my own feel for the mechanics, but the axe skip tiles were amazing! Loved the colors of them too!

Is fang still better after nerf? Or should I just scythe the whole time and double vw?
scy is better, or soulreaper axe
If food isnt an issue, i bring axe and scythe. Use axe until the percentage i can't remember/ spec with axe if needed and switch to scy. Before i was camping soulreaper and if i specced to early then i was stuck with a VW or axe with 0 stacks. Scy alone does the job just fine too. gl
