I wish they would have talked about the LVL’s size and rating and the laminating/fastening schedule. They look like 16-18” deep. Great job guys!
I'd like to see how they address the lack of collar ties in this low pitch roof. There must be some serious outward thrust to the walls.
Not necessary to have collar ties with a ridge beam. The downward thrust at the peak is transferred to either end of the ridge beam.

I did something similar, we lifted one large piece of steel from underneath, through a hole in roof. No beam pockets.
build support walls with a support lam with support all the way to the foundation

Why do you call it a “load” bearing beam or wall ? If it is a bearing wall or beam it is bearing a load🤷♂️
Otherwise it is a wall or a beam.
Why not just rebuild the house at that point?
I can name a few reasons, including the price of lumber on a roof that size.
