  • I am adding this Easy Vegan Chocolate Cake with Beetroot to the list of my Favorite Vegan Recipes. Even if you are at the beginning of your transition to the plant-based diet you might LOVE it! It is moist, chocolaty with coffee notes but at the same time surprisingly light!

    tbs = tablespoon; tsp = teaspoon
    ♥ 250ml (1 cup) coconut milk
    ♥ 1 tbs apple cider vinegar
    ♥ 1 tbs flax seeds (1,5 tbs ground flax seeds)
    ♥ 100g (1/2 cup) brown sugar (this time I used my homemade vanilla sugar instead)
    ♥ 125ml (1/2 cup) beetroot puree
    ♥ 60g (1/4 cup) rapeseed oil
    ♥ 100g all purpose flour
    ♥ 60g whole wheat flour
    ♥ 55g (1/2 cup) cocoa powder
    ♥ 2 tbs instant coffee powder
    ♥ 1 tsp baking soda
    ♥ 1/2 tsp baking powder
    ♥ 1/4 tsp flaky salt
    Chococlate topping:
    ♥ 60g dark chocolate (70% cocoa)
    ♥ 125 ml (1/2 cup) coconut milk
    topping:
    coconut flakes or roasted nuts or cocoa powder

    I tried it and it is DELICIOUS! I made it last night it came out perfect.......and then I made the beetroot crepes with the left overs, also delicious! Super happy! Thank you

    Hi Marta, no one ever made beetroot look so yummy. Only you can, the vegan goddess! maybe you can steam the beetroot too instead of oven? so the moisture is still in? why must you put apple cider vinegar to the coconut milk? i love that green saucepan, so pretty. Like 7! feel like eating chocolate cake now.

      Yes. I think that steaming would be equally good (but again I would keep the skin on). The reason I do it in the oven is because I simply add them while baking other things (to save energy 😂). When I discovered this recipe I was also puzzled about the vinegar. I actualy contacted the author (Marta Dymek - she is great; link to her book is in my description box) and she explained me it is to make the cake fluffier. In some der recipes we used to add kefir for the same reason. It sure works great ❤️
