For heavy soiling, lightly pre soak with water. Spray heavily a good apc, use a medium stiffness bristle brush to agitate. White drill brush on a drill is much better. After agitation, vacuum the seat thoroughly and in a uniform pattern. Lightly soak the fabric again with water and vacuum again to rinse the fabric. Ensure thorough vacuuming to get most of the water out of the fabric then let air dry. Alternatively use an extractor machine instead of avacuum if you have one. For very light soiling spray a low dilution of apc and agitate with cloth to transfer dirt to the cloth.

No difference, mzr is also heavily alkaline and specifically designed for upholstery. Both will damage if not used correctly. You have to leave the surface at a neutral pH state. Use pol star for interior and delicate surfaces that have dyes etc. Or just balance the surface after mzr or gs, by either rinsing(wet cloth) or by something acidic to bring the pH level down from 12/13 to 7 cancel each other out.

Secondly GS itna strong degreaser hai ye leather or interior k liay nahe hai i clean my car's engine and tyres with it
Little bro, I know you'll be thinking that you know better, but you don't. You literally removed the first leather layer off that steering with that brush. Also, 1:40 dilution, did you only used a drop of that thing? Increasing the dilution and using hard brushes isn't the key. Don't use GS on leather. just dont. Instead, use PO (Pol Star), use it with 1:10 dilution and you're good to go with the interior for the most part, regardless of the dirt. Invest in better equipment, use horse hair brushes and chemical resistant spray bottles. Literally stopped watching the vid after that steering murder.
Thats why some detailers end up fading steering buttons. It is very important to dilute cleaners for interior. Heck i dont even use apcs for minor interior cleaning.

Kochkemie gs is good if used with good dilution plus the leather was very dirty thats why i used the hard bristle brush
