Nice trip report, China Southern Airlines are surprisingly good! I would say another negative was the high cost of reserving the front row seats in economy, seemed a bit steep for a 1.5 hour flight. Really glad that you got to capture the last Asiana 747, Seoul Incheon has a really eclectic mix of airlines and is great for plane spotting as you say.
The Chinese Big Three usually don't update the cabins of their old planes, but rather choose to retire them early, so if you encounter some planes that are more than 10 years old, such as some old A330s flying intercontinental routes, the experience won't be very good. But I think for intercontinental flights, especially between Europe and Asia/Oceania, the Chinese Big Three still offer good value for money. Another point worth mentioning is that they can save at least an hour of flying time compared to European carriers, which is a big plus for economy passengers.

I prefer A330 to B787.
