yes, if you let the reservoir go empty then you will pump air into the lines. That will mean that you have to do more bleeding to get that air out of the lines, so it's best to just keep plenty of fluid in the reservoir while you are exchanging the fluid. If you're doing a job like replacing the brake lines, or master cylinder, then you will get air in the lines and you just need to spend some more time making sure that you aren't leaking fluid and to make sure you got all of the air out of the lines. But on a simple brake fluid purge just don't let it get too low and you're gold.
Good vid. In the process you've demonstrated the inevitable first-time-brake-fluid-tube-pop-off event. It's a rite of passage. I noticed the box end of your wrench is the ratcheting type... Instead, if a regular box end wrench is placed over the bleed nut before plugging in the fluid bottle, starting and stopping the flow of fluid is much easier as one doesn't need to fuss with lining up the open end of the wrench each time. It also helps ensure the tube isn't accidentally knocked off the nipple during the bleeding process.
also, you can throw a zip tie onto the hose on your bleeder valve to help hold it on..
