I intended to cut it today because I’m pretty sure it is at it’s peak of sweetness and flavor. Then I wake up to find your recipe and I know exactly what I’m going to do with some of that fresh pineapple. I have a feeling the acid from the pineapple reacting with the baking powder is going to yield one heavenly, light, fluffy muffin. I love all your recipes but same question each time. Vegetable oil in place of butter....substitution and how much? Cant have butter because of medical reasons . Please reply asap. Thanks
you add any oil you like, just add it 50% oil 1st, see the batter is thin or thick, too thin then add more flour, too thick then add little more oil. cuz i bake healthy and never use any butter. dont b afraid. good luck.
