    Mofongo is one of my favorite dishes. It takes me back to a visit to Puerto Rico in 1982 (I just aged myself a bit) and we drove around the island. I was so full, because we ate constantly so I ordered mofongo in chicken broth. The portion was huge but it was so good that I just kept eating. Then I took a nap on the beach! 🌴🌴🌴🌴

    The best thing a mother can do for a daughter is teach her to cook traditional meal no matter what ethnicity. This country is so dependent on processed microwave food and I see young girls getting married who don't even know how to boil an egg. I cook everything from scratch and all kinds of food, Asian, Spanish, Irish, Italian etc etc. I'm Puerto rican and I love mofongo but I've never made it before. I make everything else but never that. I want to make some next week and I love your video. I do have one question. Can you boil the plantains and put them in a food processor with chicharron and the garlic or would that be a no no. Thanks much

    • @MyDebora77
      @MyDebora77 7 ปีที่แล้ว +13

      Well I boil the plantain and smash the "chicharrones" (fried pork skin) with my hands. If you don't have a "pilón" and "maceta" you can smash just with a beans can. What you think??

    • @oxfords1
      @oxfords1 7 ปีที่แล้ว +16

      I want to try your method of boiling. I made mine fried and it was good but I think boiling is a little healthier and would taste just as good because you'll still get the crunch from the chicharrón. Thanks for your advice

      You cant boiled, because u need to fry them a little bit the green plantains if they are boiled before and put then to fry, it will get tooo soft and will break apart.

    Consejito: antes de comensar a pelar los platanos, labarse las manos con aceite de cocinar evita a que se te manchen las manos. Tambien como metodo mas facil y rapido de pelar los platanos, cuando hagas el corte iniciatiovo, voltea el platano y con una cuchilla de mantequilla lo vas pelando. Espero que les ayude este consejo.

      Also,
      You can use a container with warm water, enough salt, and a few spoons of milk and you can put the plantains in there b4 peeling it as well as wash your hands with same if your hands have stains from the plantains.

    ¡Es la primera ves que veo Mofongo servido con cardo de pollo o Mayo Ketchup! Mami y la familia en Mayaqüez siempre servía el Mofongo con caldo de abichuelas rojas o un caldo de carne res. Igual, la cáscara de puerco fue lo que usamos, no chicharrones en bolsa. Le regamos cáscara de puerco con pedazos de pernil. Siempre se reservaba la cáscara después de hasar un pernil para hacer el mofongo. ¡Me has recordodos de memorias muy hermosas! Gracias.

    I don't remember my mother ever making 'Mofongo' even though I knew it was Puerto Rican. And I had never heard of 'Piononos' when I first tried them 20 years ago. Actually, I never knew that Puerto Ricans made "Chicharon de Pollo'(I love it). There are so many foods attributed to Puerto Rico that I did not know. I recently made the things that I do remember(all according to your specifications Ida). Made my favorite: Pollo guisado(pardon my spelling), Chicken soup-to your specifications and got emotional when you posted the simple recipe for 'Surollitos de maiz' which I haven't had in decades. All of it is quick and simple. Trying to remember good memories and trying or forget bad ones by cooking these foods- Puerto Rican boy and yes, I do miss my mother!

    I made it like this with the peppers and onions sauce. I couldn't find anything in the house that looked like a pestle, so I used a food processor and then pressed it into bowls with the back of a spoon. Cuban hubby (via Puerto Rico) ate his Mofongo dry, but he put the peppers on the adobo seasoned pork chop that I served with it. He was very happy. He said I got it right.

    The chicken broth was from bouillon. I use one that is seasoned with sea salt.

    This is one of my favorites! I've eaten it in a couple of restaurants, and it was not good. So I make it to my taste and I use a lot of what you do, so I know that it's good. I am so hungry right now. Great job. You are so good on video.

    Thank you for this great video. I had the opportunity to visit the wonderful Isla del Encanto a couple of years ago. While there, I discovered this wonderful dish and ate it almost daily. Wishing to make this when I returned home, I realized I didn't have access to the pork crackling. To my great surprise, I found it this week in our grocery store. I ran to the vegetable section and found some plantains. So I am all set. Sadly, I believe the plantains may be a little over ripe. But now that I know I can get all the ingredients here, I can experiment with this batch. Having this video will make this much easier. That said, I am so looking forward to returning to Puerto Rico to sample the real thing again. Wonderful place, wonderful people, wonderful food. What more would someone need.

    I’ve never heard of eating mofongo with mayo/ketchup or even chicken broth. (Especially in PR) I’ve always had it with a side of olive oil infused with smashed garlic cloves (😋Mmmm! Delicious!)

    • @taraham330
      @taraham330 5 ปีที่แล้ว

      Angie Rodriguez that’s what I was thinking. My mom is from PR and we have always done it with garlic olive oil and some cilantro for garnish or to make it look pretty. My Abuela used to add a little chicken broth with olive oil to mash it so it won’t be dry..
