    BUTTERNUT SQUASH 700-800G
    4 TBSP OIL
    2 TEZ PATA - BAY LEAF
    2 CASSIA BARK - CINNAMON
    4-6 CARDAMON
    ONION 140G
    GARLIC 40G
    GINGER 30G
    GREEN CHILLI 6G
    1.5 TSP SALT
    1/2 TSP TURMERIC POWDER
    1.5 TSP CHILLI POWDER
    2 TSP CORIANDER POWDER
    2 TSP CURRY POWDER
    1 TSP CUMIN POWDER
    CORIANDER FOR GARNISH

    Tried this recipe and it was delicious! I made a booboo in that I added a little too much water and added one too many chillies lol. But the wife is very happy with it. I was happy to recycle some left over butternut in the fridge. The mark of a great chef is to make ordinary guys do extraordinary cooking! Love your channel. Love your cooking. Let the recipes roll!

    These days I add a few dollops of Pakeeza yoghurt to my curries at this stage. I find it thickens the sauce.
    I usually add it after the powders.

    When we make it in the restaurant for staff, we boil the squash in chef spoon sugar and some whole garam masala before adding to the curry. Makes the squash extra sweet, very nice against the spicy savoury lamb.

    OMG!!! I am an English woman living in Nigeria. Indian food, in all its manifestations, is my absolute favourite so as you imagine, watching this has made my mouth water and brought on my cravings again.
    Can you help me and tell me which type of pans are the best to use. I do not like to use nonstick at all but I also don't like my food to stick. I've been making indian restaurant style curry for some years and whilst it is delicious, your way looks and sounds even better, I can even smell it from here 😂
    I have been using a stainless steel IKEA frying pan but this pan looks like aluminium? I might add I have no complaints at all about my pan but I like to copy things to the letter 😂 can you see any benefits to changing the type of pan I use?

    Mash'Allah looks beautiful but can't help thinking would have been much more tender, faster and probably fuller flavour if you had used a PRESSURE COOKER bro. It's a must if you gonna do Gosht (Mutton or lamb or beef). literally about to make BNS mutton curry myself so thought I'd see how others do it, as we dont really use BNS as an ingredient on a regular. I think Imma follow my maa's gongaloo gosht recipe though, yes there is tin tomatoes ....Pakistan Zindabaad!

    Curious to know why Garam masala powered was necessary if the bay leaf, cinnamon stick (didn’t see if Caedmon seed) was added at the beginning of the onion sauté part. Also , noticed cloves were missing .
    Wanted to know if there was a reason why the spice powderers weren’t added sooner.

    Do you think there is a tendency for Indian restaurants to buy in factory prepared chicken tikka? I don’t think it has the flavour that it used to and it’s often so dry, you can’t even tell it’s chicken.
