    Nisha you knocked it out of the park again! I made this for dinner tonight & it was a huge hit - thank you! I didn’t have lemon grass so it was omitted and used regular basil for the Thai basil other than that followed your recipe. People need to make this!!!!

      Mint or cilantro would’ve been another alternative as Thai Basil has more of those characters in it. However, glad it came out great😊

      Same here. I actually had lemongrass that didn't get used and voila, this recipe appears. Made it today and it is so amazing. I only had dried thai basil but worked fine. Can't believe I had everything I needed.

    I made this today for my wife, and we loved it! Your prep tips are very helpful, like nuking the squash prior to peeling and cutting. It helped. You make veganism so much easier!

    If you have never tried making this. 100% do it now! It was so delicious that I ate it for 6 days in a row. 2 meals a day. And I'm one of those people who get sick of eating the same meal after one or two times. So freaking good, enjoyed it every time.

    I didn't have any of the Thai ingredients so made this with spices I would use in an Indian curry instead (ground cumin, ground cinnamon, garam masala) and it was amaaaazing. Hands down the best curry I've ever made

    I made this Sunday and I had enough leftover that I had it every night for dinner Sunday- Thursday. My mum couldn’t understand how I wasn’t fed up eating the same thing for 5 nights in a row... I wasn’t because it tasted so good!! Loved this recipe- new subscriber ☺️

    Im not a fan of chickpeas or butternut squash but THIS tastes amazing! This is now going to be a regular in our house!
    If you want to make it less calorific, use about half a cup of shredded coconut instead of a can of coconut milk. Its still creamy coconutty and delicious but a lot less fat!

    What a simple, yet elegant recipe! This is the first recipe of yours that I have made all the way through and it was a big hit! I didn't have lemongrass in my grocery store so I used a trick I recently learned on Top Chef. One of the contestants was making a Thai curry and also didn't have lemongrass so she grilled lemon slices and cooked her curry with those in there. It really did give that same sort of flavor! Going to try some of your dal tips next! Thanks for all of the inspiring content!

    OH MY GOSH! Amazing! I'm not vegan, I'm an omnivore but I'm trying to eat more plants. I made this recipe tonight for dinner. Holy moly. So good. The differences are that I used homemade red curry paste, I did not add spinach at the end, and I used chicken stock instead of veggie stock. It's so good. Thank you so much for this recipe!

    Made this today for dinner and I cannot begin to tell you how good it was. I didn't have lemon grass, so added some lemon zest and it gave it an incredible floral and lemony twist and flavor. My kids, who aren't vegan absolutely loved it. Can't wait to try other recipes. Great job!

      Same here! I have done like 5 recipes so far YUM!!! Some on repeat. Didnt like the jackfruit curry tho but it was a texture issue 😂 the rest has been AMAZING!

      @@RainbowPlantLife same for me. Cutting back on meat. Trader Joe's has a great Red Curry Sauce. After your reaction to that canned Red Curry, I think I'll pass on that brand, as I can't due real spicy any more. I just try to watch out for MSG as it give me a horrible headache. I love shopping at my nearest Asian store, as their prices are lower for the exact same thing at your major grocery store in their ethnic aisles.

    Nisha, I love your channel! As a fellow Harvard grad and long-term stressed lawyer, I’m so happy to see you following your dreams and doing what makes you happy. I’ve been plant based for a few years and am always looking for flavorful recipes, so I’m happy to have discovered your channel just a few days ago. After a few watches, I ordered your cookbook and already have it in hand. I can’t wait to try those recipes as well as ones on your channel. I love your tips on freezing things like stock and herbs to avoid waste. One thing I am interested in seeing you do a video on would be your tips for storing your most commonly used fruits, veggies and other perishables. I have a system that sort of works, but I’m not completely satisfied. It would be great to hear some of your ideas and tips.

    I made this recipe, it’s really good I only changed the following: I used lentils instead of chickpeas as I didn’t have chickpeas on hand, greens are expensive in my area so I used red coleslaw I saved from the previous growing season (turned out beautifully), I served it on wild rice which I got from a Native American grocer (locally harvested and nutritious) and I used ponzu soy sauce which is a Japanese soy sauce infused with citrus (living far north it’s important to include a lot of vitamin d in your diet this time of year). It turned out well. Thank you for sharing.

    This was absolutely delicious! Didn't have lemon grass, used Serrano peppers for spice, and my grocery store was out of red curry paste so I used green instead. It was still very flavorful and made tons of leftovers that I am using as my week's meal prep. Thanks for sharing this wonderful recipe!

    Great! Thanks! I can’t wait to try this! By the way… It’s super easy to grow your own Lemon Grass. Simply poke those stalks into some potting soil and water occasionally and it will easily take root and within months it will take over the whole pot. It grows sort of like Bamboo, it sends out roots and they send up lots of new shoots. This has worked every time I’ve tried it! Most Asian Markets have it. If you stick it in a glass of water or bottle it will root also. You can watch them as they grow and then transplant them into potting soil.

      @@SenorJuan2023 The microwave was just to soften the squash enough to make it easy to cut up, I thought. You don't have to cook the squash beforehand.

    I made this on Sunday and it was really delicious! I didn't have any lemongrass or Thai Basil leaves but I will for next time. That didn't change the fact that it was so good even without those ingredients.     OMG! I just made this for dinner tonight and it is soooo good! I found out about it on Instagram and was drawn in by the amazing photography. I am a photographer and was very impressed with the shots you shared there. Then I saw that it was vegetarian and knew I had to make it, 1. Because my boyfriend has decided to go vegetarian and 2. Because we love Thai food! Very yummy meal and plenty of leftovers. Thank you for sharing and your videos and photography!!!

    OH.MY.LORD! This turned out absolutely👌👌. Never imagined adding a Thai flavor to pumpkin. I had neither the spinach nor the kale; but didn’t let that get me down. Just substituted with celery leaves.

    Not a vegan. Not even vegan friendly. I ended up here because I bought a butternut squash and I didn't know what to do with it.
    I have to say that I am blown away. I have followed the recipe and it's just delicious. It was just crazy good. ALTHOUGH I had to put some heavy cream into it because it was too spicy for me... lol
    Honestly, cant wait to explore your channel. Huge thank you

    Just made this yesterday and it was superb! A lot of ingredients but once you cube the butternut squash (great microwave tip) not difficult. Spicy and flavorful. Thanks.

    Hi, this is the first of your videos I've watched. I ordered your cookbook last week and it is So beautiful. I'm not even Vegan, but I do have an instant pot.     I made a pot full of this 2 days ago, I used green beans instead of chickpeas and my roasted squash was a bit over soft but it was all superb. Gave some to a young friend who said she doesnt usually like curry, she said it was delicious. I agree. I will definitely cook this again and again , to use the red curry sauce leftover from this recipe. I will add some other vegetables for variety ( sorry and prawns will go well). A dish to impress. Glad I found your site. Of course you know that I will never admit its your recipe. I am taking all credit.

    I didn't have all the ingredients like lemon grass and can't do spicy. But my husband LOVED it. He added curry powder and mixed it with peas.
