i used evaporated milk and used unsweetened coconuts flakes instead of grated coconut and it turned out great. for anyone confused, I just added the eggs after beating the butter and sugar for the 5 mins.
I read the recipe and viewed the video.There is an error in the list of ingredients...You said 2 tsps. Baking powder but the recipe list has 2 tsps. Baking soda. Check your video. The recipe looks well-balanced but I would prefer 1 cup brown sugar. You need to add grated lime/ lemon peel, 1 tsp. Lime juice and a few dashes of Angostura Bitters to enhance flavours. Just giving advise. Hope it is well received.
Maybe I missed a few steps: I did not see you add the eggs, noticed no salt. I did not get how long to bake for and the written recipe is different with the video on the baking powder/soda.
As a pastry and dessert chef i think she missed showing that she added the eggs after she creamed the butter and sugar together.. because i noticed the difference in the consistency of the mixture before she added the flour etc..

Yes at 350 degrees, after 50 mins you can test with a skewer to see if it is cooked. The total baking time is usally 60 mins
