गोवा स्टाइल अंडा करी। I Goan Style Egg Xacuti I Egg Drop Curry Goan Style I @Nikitaskitchen_15
INGREDIENTS
Fresh Grated Coconut - 1 cup
Chopped onions - 3 medium size
Tomatoes - 2 medium size
Green chilly - 2
Garlic - 15 to 20 Cloves
Ginger - 1 inch
Egg - 4
Fresh coriander leaves
Tumeric powder - 1/2 tsp
Chicken Masala powder - 2 Tbsp
Oil - 4 tbsp
Salt as per taste
Water as required
METHOD/PREPRATION
For curry paste:
Heat a pan, add 2tbsp oil, add 15 medium size garlic cloves, 1inch ginger, 2 green chillies saute till aroma release, add chopped onion saute until it becomes translucent, add fresh Grated Coconut, 1 chopped tomato and fresh coriander leaves, sauté until coconut changes colour to golden. Let it cool down for some time.
Add 1/2tsp turmeric powder and 2tbsp chicken masala powder.
Transfer it into the grinder, add water as per requirement and grind it to fine paste.
Heat 2 tablespoons of oil in a clay pot or kadai, add 5 crushed garlic, saute until the aroma releases, add 1 chopped medium onion and 1 medium tomato, saute for 2 minutes, and add the Xacuti paste. Add water and adjust the consistency.
Add salt to taste, allow it to cook for 10 to 15 minutes, stir for a minute, add 4 eggs, and cook it for 5 minutes on medium flame. Garnish with chopped fresh coriander leaves.
Egg curry is ready to serve. Serve it with hot rice, paratha, chapati, or roti as per your choice.
