      Paella Recipe CHORIZO NO-NO- NO !!!
      Being "hard pressed" to find CHORIZO in paella is an understatement. Literally none has ever used CHORIZO in paella, just because the instant the CHORIZO touches the rice it is no longer paella (You cooking Mexican Paella not Spanish)

    My ex lover from Spain -- his mother taught me this about Paella (which is cooked best over a wood fire), and they were from Valencia where the "poor man's" version originates. Fifteen minute rule: after all ingredients are in pan, a 15 simmer, cover, 15 minutes in overn, 15 minutes rest with cover. With Valencian paella, add green beans at pre oven step. The seafood version: add all the fish or shellfish late after rice is well-simmered. Clams, shrimp, scallops, even langostino or lobster to steam without over-cooking. Very filling and hardy dish. Saffron is essential. Invest in a few ounces despite cost of it.

      Is this authentic taste of Paella? I had to replace some ingredients due to unavailability but it was spicy. Paella I had before was sweeter and had tomato base. Which one is the real one? Didn't like this one's taste much.

      ​@@nilanjasa007The original Paella recipe shouldn't be spicy at all. It should just have green beans, chicken, rabbit (I know, it is what it is), rice, butter beans (garrofón) and saffron. The pan frying starts with olive oil and then chopped tomato, then the rest.

      @@Silfasdamn that sucks, I’m latina but I’m allergic to beans so can’t have that version. However I’ve mostly seen just the seafood version which doesn’t contain beans.

    My gosh I LOVE paella! I haven’t had it in 12 yrs. My Puerto Rican friend used to make this for me. Time for me to try my hand at it. Thx for making it look so easy 😊

    Love rice cooked this way. I have made with ham hocks and chicken. Not with shrimp. It is delicious. I can smell it already. Brings back memories. Thank you for sharing with 🇺🇸 us.

    I love the fact she's using really great and fresh ingredients like the veggies and stuff. I didn't like when she putted the chicken and chorizo into the pan at the same time. It would've been better if she putted one for cooking at the time because I think that way, the protein would've cooked and secured its own falvor.

      Yes every meat has to be cooked at a different time otherwise the seafood will be gummy in texture and overcooked. And the chorizo takes longer to cook than the chicken and seafood.

    Paella doesn’t use paprika and it doesn’t stir fry the rice. This is a Mexican rice and seafood recipe but not a Paella. My family is from Spain and I cook paellas often….the rice from a paella is moist almost like a risotto and it contains annatto seeds that have been sautéed with the oil.

    Do you even know what Paella is? This is just a Spanish inspired rice dish. There is no onion, parsley, oregano, bay leaf or chorizo in paella. Paella has seafood or meat, never both. You don’t add lemon into Paella, it can be served on the side. It should be cooked in a paella pan to produce the socarrat. You do not stir paella. There is not chilli in paella. And you cooked it wrong “Pretty much anything” does not go.
    Do you add chicken, sweet corn, pepperoni, pineapple and squid to a pizza and call it a Margarita?
