Whole Packer Brisket Competition Trimmed & Smoked Overnight in the Oklahoma Joe’s Bronco-Baker’s BBQ

- Whole Packer Brisket (14.5lbs) smoked at 260*-265* for 13hrs in the Oklahoma Joe’s Bronco bringing the internal temp to 205* over mesquite, followed by a 7hr rest in a dry cooler wrapped in butcher paper with beef tallow. Total cook and rest time was 20hrs and was well worth the effort. Happy smoking my friends!

I'm gonna smoke my 1st whole brisket for the football game this Sunday. Almost the same way you did but I'll be using my bronco pro. I have an inkbird air controller so I'll have time to rest once I wrap. I'll be using foil for the wrap and add some apple juice as well. Picked up some B&B lump coals with hickory but I'll be adding a few post oak chunks as well. Picked up a 17 lb packer select grass fed so hopefully it's gonna be delicious. Thanks for the tips🤙🏽
