      Strawberries and the cream flavoured with elderflower syrup. The combination makes one of my favourite early summer cake fillings.
      Quinces would be nice, too.

    Here’s s tip to anyone that don’t have a serrated knife. Cut the mango from the stem. It helps you go through the fibres a lot easier.

    Mango gulash (baklava) and mango kunafa have been very famous in egypt lately. It started with mango kuanafas now there are nutella kunafas, cheescake kunafas, etc and every year more inventions. Same in qatayf and baklava

    YES TO THIS RECIPE! 🌸🌸🌸 I love your tip about choosing which mangoes to buy because that's how we also do it in the Philippines. If you can't smell them from an arm's length, they're not usually as sweet/tasty. Excellent video as always!

    So, I've just stumbled upon your youtube videos...
    Thank you so much for what you do. This recipe will be the next one I follow for baklava!
    Not attempted clarification of butter before, wondering what difference I may see?
    My last baklava was fairly traditional, two individual layers of mixed and crushed walnuts and pistachios.
    Those layers were separated by layers of phyllo and also a single layer of chopped dates, figs, and apricots
    (chopped/mixed with almond flour and a dash of cinnamon to keep the fruit from sticking, allowing easier spreading)
    Syrup flavored with my local citrus, should have baked it 10 degrees higher. Still, one of my best ever.
    Anyway!!!

    I live on the west coast of Florida and my mango tree has a bumper crop this year. I clean mine by simply peeling the skin off. I am defiantly going to try this recipe with much less sugar. My mango is very sweet with very little fiber.

    I can’t believe that I have never found out about this dessert despite visiting Egypt multiple times, looks amazing! Do you think if I gave it a go with canned mango, it would taste good enough? It’s not really easy for me to find the type of mango which you used.

      I think you can use canned mangos, and you can use the syrup as well. Might have to reduce it a bit though.

    This looks so good!! Personally the only time I got upset about baklava was when I forgot to read the ingredients on the storebought box and it was vanilla syrup instead of honey lol
    My dad still liked them though so they didn't go to waste :D

    I'm a big fan of those Indian/Pakistani mangos, too. They have a short season but can easily be frozen. No need to blanch them, just cut them in junks and loosely freeze them on a tray. Then place them in a freezer bag and remove as much of the air as possible. Double wrapping won't hurt.

      We freeze them whole with their skins. Takes up more space but it also preserves the texture a lot!

    Philippine Mangoes are so Yellow and flawless. But the mango in the video is probably the same variety.

    Respect for being a small, yellow mango man. Pakistani I believe you said? I've had them here in my country although they are quite rare compared to the big red/green ones. However, I have often raved about how much better the little yellow ones are. Such a sweet flavour!!!

      I've seen it at some of the halal shops, doesn't seem quite the same as the greek kind though.

      You can sometimes find it in the frozen section as パイシート , though they're pretty small and rectangular

      Try it with the Puff Pastry as Nat Mentioned. Just cut a single sheet of puff and it will form loads of layers. That will be closer to a Tarte Tatin, but it will still be great!

      Not really, it's a misconception that Knafeh is shredded phyllo pastry. It's actually a batter which is cooked on a large pan. I linked to a video of it in my cheese konafa video, maybe check that out. It isn't that hard to make!

    I wasn't aware you can pronounce baklava with a "W". I'm used to the Greek and Iranian variations where the latter is sweeter and topped with pistachios with a more cake-like texture and the former is thinner with apparently more walnuts. For context, I do live near a Farsi market and I had a classmate who knew how to make the Greek variation. That said, I do love mangoes and baklavas. Ngl, baklavas are hella sweet, so it'll be gone within two days at my fridge. I found out that they go well with mint or lemon tea. Oh... and I'm also biased towards Philippine mangoes, btw.
