- Hi Friend, Join me as I restock my homestead kitchen and do some meal prep for the week. This always saves me so much time! We'll be making breakfast for the family, some lunch for me and a healthy snack.

Making bread for the month in one day :
• How to make a MONTH of...
Blueberry Muffin Recipe
Ingredients:
- 2 eggs
- 8 tablespoons avocado oil
- ¾ cup organic oat milk with a splash of apple cider vinegar
- ¾ cup raw honey
- 2¼ cups gluten-free flour blend(i used bobs red mill)
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1½ cups fresh blueberries
Instructions:
1. Preheat the Oven: Preheat your oven to 350°F and line a muffin tin with paper liners or grease the muffin cups.
2. Prepare the Wet Ingredients: In a large mixing bowl, whisk together the eggs, avocado oil, almond milk with apple cider vinegar, and raw honey until well combined.
3. Mix the Dry Ingredients: In a separate bowl, combine the gluten-free flour blend, baking powder, baking soda, and salt.
4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix the batter.
5. Add Blueberries: Gently fold in the fresh blueberries until evenly distributed throughout the batter.
6. Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
7. Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Remove from tin and allow to cool on a cooling rack.
Quiche Base:
12 eggs
1 cup milk
1 cup cheese
1.5 cups add ins of choice
1 tsp salt
1/4 tsp pepper
1/2 tsp onion powder
bake at 375 for 25-30 minutes or until center is set.
Salmon glaze:
3 tbsp maple syrup
1 tbsp brown sugar
1 tbsp paprika
1 tbsp chili powder
pinch salt

Often times we get caught up in needing all of the tools, antique decorations, animals- all of “the things” to maintain a perfect rustic/homestead aesthetic- and some content creators don’t let us see real life to maintain that aesthetic. (Your house is beautiful don’t get me wrong) but your realness is a friendly reminder that we don’t need all of the things to be diligent in the home!💜
When I make a breakfast quiche I use hash browns as a crust. Pre-baking the hash browns with butter (in the pie pan) makes them nice and crispy.

Fall is my favorite time of year. Last weeks temp for Ohio was wonderful. We're hitting 94 today. Because of the hot spells we had this summer, I got into the habit of doing a majority of the cooking on Sunday for the week. I think it was worth. Helped keep things a little cooler + little less stress at supper time. One day I hope to do bread as well as you. One day. Lol. I keep trying. Thanks & God bless.

I’m a clutter bug, too. I don’t mean to do it, I just have a lot of interests and I’m busy. I guess Im more invested in making things than cleaning. Oh well. Everything looked delicious!

That salmon marinade or sauce looks very good. I am recovering from a pretty big surgery so I've not been doing much extra but have been thankful for the freezer cooking I did before surgery.

I’m taking a tea break for your video. It’s a hazy cool fall like day here and I’m spending it canning tomatoes that I got from my CSA farm. I’m thinking I’ve only got 9 jars of stewed tomatoes and 5 of tomato juice. I’ll need to order more. But for now, it’s second cup of tea and watching your video.

I was making bread for the week (while my child was sitting on the counter telling me about his day) when I noticed that I had put 2 TBS of yeast instead of 2 tsp....needless to say I don't have to make bread next week..it's sitting ready in the fridge. 🙂

The weather has been wet and cool here. Today’s high is only 69 with overnight low predicted to be 47 😮. We do pick up temps again tomorrow into the 70’s and into the 80’s by the weekend. Although we have been blessed with some wonderful harvests from the garden, I’m sad to say that I will have no tomato harvest. We will see about going and purchasing some tomatoes so that I can get some on the shelves so hopefully it won’t be a complete loss as far as canning for the year goes. I’m ready to be done with the garden this year. I do have a few things growing still which I’m grateful for whatever we get from what’s left, assuming it doesn’t succumb to the low tonight. What a strange weather year it has been.
Your food prep look so good and I’m reminded I need to clear off the jars that are ready to be moved to shelves and get some bread products made! Your peaceful videos are a beautiful way to start my morning! God Bless you friend.

Your temperatures sound like mine. I live in Central IL and it was 99 degrees today, but Monday it will be 74. I can't wait!! I have been making homemade bread since last October and that's what we eat. My oven died at the end of July, so I'd been going to my son's home and baking a couple loaves every other weekend. I get a new stove tomorrow. It will be great to bake it in my own oven...which there may be a bit of a learning curve with it. Those mini loaf pans are adorable!!
