Dicing a sausage is like a dicing a zucchini. First half then quarter. Turn it 90 degrees chop again. Using a claw grip will avoid cutting yourself. You'll have nice uniform cubes. Your food will look nicer and taste even better. Dicing an onion is very similar.

Johnsonville italian sausage hot or mild is my favorite sausage, some recipes I like Ekrich Kielbasa that may be good with your style of soup there. Usually pairs well with greens.
If it is bleeding that bad, you need to super glue it together. Just put a little glue right on the cut and and the push the sides in to seal the cut. You don't want a lot of glue and you want to have the pushing fingers out to the sides so not to glue them to the finger with the cut.
A vent in the roof would help some with the condensation. It's sold in shops for caravan and RV. Drilling in fiberglas is no problem, just put some masking tape at the outside and drill from there. Keep beeing awsome girls! Cutest couple ever.
